To Die For Blueberry Muffins

I made a slightly healthier version of this recipe and they were still "to die for." I used one cup whole wheat flour and one half cup white flour. Instead of the topping suggested, I used some oats mixed with a little brown sugar. I also used frozen mixed berries (blackberries/raspberries/blueberries) and added an extra quarter of a cup. Yum!

Banana-Dulce de Leche Pie (Banana-Caramel Pie)

My boyfriend and I have nicknamed this dessert "death pie," as it is so clearly unhealthy and decedent. That said, we loved it. We live in Chile where dulce de leche is called majar and there are whole supermarket shelves dedicated to selling it ready made. Since graham crackers are hard to come by here, I used an oatmeal cookie crust which I HIGHLY recommend. It gave a great texture to pie.

Butter Chickpea Curry

I found this recipe to be really lacking in flavor. I was expecting something with a more authentic and full bodied taste. The final product wasn't bad, but I won't be making it again.

Dutch Apple Cake

Very nice! I used 3/4 brown sugar instead of 1 cup of white sugar and I still found it to be very sweet. This might be because I also used a sweeter apple. I will definitely make this again, probably using 1/2 cup brown sugar and sweeter apples.

Mom's Buttermilk Pancakes

I've made this recipe many times. The recipe is ALMOST perfect as written. Cut the salt to 1/2 tsp and you have the perfect pancake recipe. This pancake is very versatile. It's great with grated apple and cinnamon, blueberries, or chocolate chips stirred into the batter. This recipe serves two hungry adults.

Bavarian Apple Torte

I wonder if I made a mistake. It just wasn't the fantastic torte I thought it would be. First of all, the crust was far too thick and buttery. It was a little soggy before it was refrigerated and rock hard after being refrigerated. I took other readers advice and halfed the cream cheese filling. I wish that I hadn't, as it was too dry around the edges. I hope to find a better recipe for this torte. It sounds like a fantastic dessert.

Scones

Nice, but not scones as I know them. They were very soft. I'm used to dryer crunchier scones. Still, we loved them. I substituted whole wheat flour for half of the flour in the recipe. They were great with jam.

Yellow Squash Casserole

I was very disappointed by this recipe. I'm only giving it 3 stars because it looked so pretty coming out of the oven! I was expecting something cheesey and crunchy and buttery, instead I got layers of squash surrounded by an eggy, crackery mixture. The two components didn't seem to blend very well. Don't get me wrong, it was quite edible, just not what I was looking for. I won't make it again. (Very pretty though!)

Drop Biscuits and Gravy

This rating is only for the biscuits, as I used a chicken gravy to top them instead of this gravy recipe. The biscuits were SO EASY. Way easier than my normal recipe and with far less fat. Will make again!

Crispy Fried Chicken

When I made this I used chicken breasts cut into chunks. The cooking time seemed a bit long so I fried the chunks for 10 minutes instead of 30. They were a bit over cooked and tough. The coating, however, was amazing! I'm sure that this would be a 5 star++ recipe if I fried the chicken for less time (or used big pieces of chicken).

Fresh Peach Cobbler I

Great recipe! Also very versatile. I didn't have enough peaches so I used about 3 cups of peaches and 1 cup of strawberries and blackberries. I also didn't have enough white flour so I used mostly whole wheat. It came out wonderfully. This is a great recipe for entertaining, as it comes together very quickly and looks/tastes impressive with a big spoonful of whipped cream.

Crispy Mashed Potato Pancake

Great basic recipe! I've used this recipe as a starting point on many occasions to use up leftover mashed potatoes. It's become one of my favorite breakfasts! Sometimes I add a bit of cheese or fresh chopped onion. I also add a sprinkling of flour so that it holds together better.

Ultra Easy Cream Cheese Dip

It's okay as a base recipe. I added quite a bit of Korean red pepper paste and a teaspoon of homey to give it some flavor. I also used soft cream cheese and less milk to make the process a bit easier.

Blueberry Crumb Bars

Great and easy recipe! I love that the same mixture is used for both the bottom crust and the crumb on top! I used fresh blackberries and it worked great. The only thing I'd do differently next time would be to add less sugar. They were a little sweet for me, but everyone else loved them.

Yum! This was perfect for Valentines Day! I used Green and Black's 72% cacao baking bar. I baked them in silicone muffin cups (made 10 this way). They reheated well in the toaster oven the next day too!

Easy Beer Bread Mix

Yum. I can't stop eating this! Very versatile recipe. I substituted 1/2 of the flour for whole wheat, added chopped green olives and fresh rosemary. I used olive oil instead of butter, too. This would be amazing with soup. Next time I will try baking this as rolls in muffin tins. The best part was the crust that almost seemed fried by the olive oil. So good.
