Chef John's Pumpkin Pancakes

These were great, although the batter was a little too thick. Next time I will add more milk. I also left out the allspice (because I didn't have any) and decreased the ginger to 1/4 tsp. (because I thought 1/2 tsp. would be too strong). Next time I will try adding nutmeg. I would encourage you to alter the spices according to your taste preferences.

Cranberry Pumpkin Muffins

Blueberry Buckle

This is exactly the same as my grandmother's blueberry recipe except for that hers uses brown sugar in the topping instead of white. This is an awesome cake. It's a favorite in my family and among my friends.

Vegan Cupcakes

Awesome cupcakes. I used soy milk and canola oil because that's what I had on hand. I also added some diced strawberries and topped the cupcakes with strawberry frosting. I could see this recipe being tweaked to make many different flavors, and I'm sure it would be great as is. Wonderful recipe!!

Sweet Potato Pie I

This pie was great!! I made a few changes to suit my taste. I only put in 1/2 cup of sugar and I used brown sugar. I used soy milk instead of regular and I added a pinch of ground cloves. I also used only half the butter the recipe called for and it was plenty rich. I used leftover baked sweet potatoes that were stored in my refrigerator over night and did not notice any of the graininess mentioned by other raters that used cold sweet potatoes.

Savory Cheddar Zucchini Muffins

I loved these! Especially straight out of the oven. I made quite a few changes and didn't find them bland at all. Firstly, I used a mixture of grated zucchini and apple, probably a little over a cup in total. I used two big cloves of garlic and a bit of fresh ground pepper. I used one cup of cheddar cheese and omitted the parm and bacon because I didn't have any. I found the baking time to be about right, unlike other raters. I think this is a great versatile recipe. Thanks for sharing!!

Easy Beer Bread Mix

Yum. I can't stop eating this! Very versatile recipe. I substituted 1/2 of the flour for whole wheat, added chopped green olives and fresh rosemary. I used olive oil instead of butter, too. This would be amazing with soup. Next time I will try baking this as rolls in muffin tins. The best part was the crust that almost seemed fried by the olive oil. So good.

Ghirardelli® Individual Chocolate Lava Cakes

Yum! This was perfect for Valentines Day! I used Green and Black's 72% cacao baking bar. I baked them in silicone muffin cups (made 10 this way). They reheated well in the toaster oven the next day too!

Blueberry Crumb Bars

Great and easy recipe! I love that the same mixture is used for both the bottom crust and the crumb on top! I used fresh blackberries and it worked great. The only thing I'd do differently next time would be to add less sugar. They were a little sweet for me, but everyone else loved them.

Ultra Easy Cream Cheese Dip

It's okay as a base recipe. I added quite a bit of Korean red pepper paste and a teaspoon of homey to give it some flavor. I also used soft cream cheese and less milk to make the process a bit easier.

Crispy Mashed Potato Pancake

Great basic recipe! I've used this recipe as a starting point on many occasions to use up leftover mashed potatoes. It's become one of my favorite breakfasts! Sometimes I add a bit of cheese or fresh chopped onion. I also add a sprinkling of flour so that it holds together better.

Fresh Peach Cobbler I

Great recipe! Also very versatile. I didn't have enough peaches so I used about 3 cups of peaches and 1 cup of strawberries and blackberries. I also didn't have enough white flour so I used mostly whole wheat. It came out wonderfully. This is a great recipe for entertaining, as it comes together very quickly and looks/tastes impressive with a big spoonful of whipped cream.

Crispy Fried Chicken

When I made this I used chicken breasts cut into chunks. The cooking time seemed a bit long so I fried the chunks for 10 minutes instead of 30. They were a bit over cooked and tough. The coating, however, was amazing! I'm sure that this would be a 5 star++ recipe if I fried the chicken for less time (or used big pieces of chicken).

Drop Biscuits and Gravy

This rating is only for the biscuits, as I used a chicken gravy to top them instead of this gravy recipe. The biscuits were SO EASY. Way easier than my normal recipe and with far less fat. Will make again!
