I had my doubts as I was kneading this dough. Not wanting to purchase bread flour, I removed 4 tbsps of AP and added the same of Vital Wheat Gluten. The dough was incredibly tough to knead and it took three hours for it to rise even a little. Before cooking, I heated a cast iron pan in the oven to get it nice and hot. I rolled out my balls of dough (they did soften a bit as they sat), which made close to 20 huge pieces. I carefully placed them in the dry pan for no more than 1 min. each side. They bubbled and darkened perfectly! As they were removed, I brushed them with a little butter and garlic. The end result is great. They're the perfect combination of chewy and soft (the gluten really made these work). I wrapped up the leftovers in foil and brought them to work today. They're even better reheated in the microwave for 30 seconds.

The Best Rolled Sugar Cookies
Followed the recipe except I used lemon extract instead of vanilla for a brighter flavor. I rolled the chilled dough out onto parchment, using a bit of powdered sugar to prevent sticking. Everything went like clockwork. The cookies didn't spread, they didn't burn, they were fantastic. I've never had success with sugar cookies and this recipe has made me a convert. Ended up turning them into cookie bouquets (hearts). I can't wait for Christmas!
