Pecan Pie V

This is such a great recipe and I feel so much better not using all of that oil needed in other recipes. I even cut the butter in half and substituted with apple sauce. Tasty!

Runaway Bay Jamaican Chicken

My husband and I love this recipe; it really reminds us of Jamaica! You can add or not add anything and it'll still turn out great. I make a double recipe and use 1/2 to marinate the chicken, and then cook the other 1/2 in a sauce pan on the grill to pour on top of the cooked chicken, so it's extra saucy!

Enchilada Stuffed Shells

Excellent!! Made as is, except I added the refried beans to the meat mixture along with diced onion and jalapeño and I poured extra enchilada sauce over the stuffed shells before baking to prevent the pasta from getting dry. After baking, I sprinkled with fresh cilantro and added some sour cream and this was a hit!! Leftovers were really good too. Will make again, it was a nice variation from regular enchiladas!

Pudding Poke Cake

Absolutely delicious! I used two one ounce boxes of fat free sugar free vanilla pudding, following the box’s directions of adding 4 cups of milk total and yellow cake mix (prepared with apple sauce instead of oil) and completely skipped the sugar per others suggestions. I'm not sure what others mean that this was sloppy and hard to serve. Mine cut perfectly into squares (like a normal cake would) and maintained its shape, but I did refrigerate for over 2 hours to let the instant pudding set. This tasted so light and fluffy, next time I'm going to add a thin layer of chocolate frosting so it'll really taste like a healthy chocolate éclair!! Can’t wait to make again and actually serve to guests!

Brown Sugar Meatloaf

This is the only meatloaf recipe that I will ever make. I follow the directions closely, but put the ketchup and brown sugar on the top. Perfection everytime, my hubby can't get enough and now dislikes other meatloafs!

My Best Clam Chowder

This clam chowder recipe is delicious, but there is no need to pack in all of those calories. I followed the recipe closely, except I used 5 cans of clams, omitted the butter altogether and used all skim milk in place of the half and half. To create the desired thickness, I simply added 3 teaspoons of corn starch. At the end the red wine vinegar and some fresh chopped cilantro really gave an awesome tasty touch!! Hubby loved it, will make this again!

Scallops with White Wine Sauce II

I doubled all of the ingredients except for the butter. I think that the butter could even be reduced further to reduce the fat content without compromising the taste. I didn't want to open a fresh bottle of wine, so I used champagne instead and added the scallops to the sauce after if was boiling. Then I poured the sauce and scallops over angel hair pasta and served with steamed asparagus- perfection!! Oh and I also sprinkled crushed chilies on top for color, parsley would have been nice as well.
