Spicy Chicken and Sweet Potato Stew

Fantastic. Converted to slow cooker and doubled recipe. Used chicken thighs, cubed and slightly browned before putting in pot. Cut sweet potato in small chunks. Put everything in slow cooker, except chicken, cooked on high for total of 6 hours. Put chicken in about half way through. Didn't have any cinnamon so used 2 cinnamon sticks - fabulous aroma. Great melding of flavors. Will definitely make again. A real hit.

Roasted Brussels Sprouts

Delicious - served with ham and scalloped potatoes for Easter dinner. Added a small splash of balsamic vinegar just before serving. Big hit.

Cream of Celery Soup

Great example that there are excellent recipes on AR that do not have necessarily have hundreds of reviews. Outstanding and very easy. Perfect for the time when you have lots of left over celery. Adapted to smaller scale, followed some previous suggestions - extra carrots, garlic, sage/nutmeg, and sautéing veggies early on. So glad I tried it. Will make it again. Thanks for a keeper

Lime Cilantro Rice

Delicious easy rice preparation with refreshing results. I sauted rice in evoo prior to cooking as suggested by another reviewer. Paired with Firecracker Salmon from this site and home grown tomatoes. Wonderful way to end the work week. Will definitely make again

Asian Lettuce Wraps

Outstanding - big hit with family! Used Premium Boston Bib from Costco. Major fun participation food. Sloppy but who cares! Rarely cook during the week due to work, so made double batch - will be perfect leftover with jasmine rice or more wraps. Love it.

Brown Sugar Meatloaf

Added chopped celery, green pepper and lots of garlic. No ketchup so used chili sauce on hand, added generous shot of worcestershire sauce, cut down on brown sugar. Yummy glaze. Limited time so shapped into big hamburger patties. Coated with glaze last 10 minutes. Baked on on top of broiling pan sprayed with Pam. Grease went through slats so "burgers" were not sitting in it. Total baking time 45 minutes. Could use a bit more zip, next time will add some dijon mustard. Everyone very happy. Definitely a keeper.

Guacamole

Look no further! This is the only guac recipe you will ever need. I have made this more times than I can count - always a huge hit. My family likes chunky guac, so I use a potatoe masher, and try to keep mashing to a minumum. Add lots of medium diced roma tomatoes - definitely seed before chopping or else guac gets too runny. Be bold with extra lime and garlic. I add a few shots of sricha hot chili sauce. All to taste of course. Enjoy!

Chuck's Favorite Mac and Cheese

Big hit with family! No bread crumbs so toasted whole wheat hamburger buns for 9 minutes at 400 degrees. Cooled - tossed in cuisinart with McCormick Italian Spices. Fantastic. Also, since this was to be main part of meal, I thought 8 oz. of pasta would be skimpy for 9x13 casserole, plus I wanted leftovers. So I made entire 16 oz. box, doubled everything plus extra cheese (various in frige) and 1.5 cups skim milk per other suggestions. This fit my oval pan which is only slightly bigger than 9x13. Fed 5 adults plus leftovers.
