Delicious. Make sure you brown the chicken enough at the start. Also, I used drumsticks instead of a whole chicken

Peruvian Arroz con Pollo

No idea how "authentic" it is but it's very flavorful and tasty. Made several adjustments based on preferences/ ingredients I had on hand. - eliminated peas, cilantro - used only drumsticks - used half the amount of orange juice - cooked rice separately so it won't get soggy - added bell peppers at same time as other veggies - added more broth than called for, especially as the liquid cooked away (eyeballed it) - didn't use a blender (more out of sheer laziness) Next time I'd double the veggies

Grilled Salmon I

Simple, tasty, and quick - a winner to add to the regular weeknight rotation! Made a few modifications: - marinated for only 20 min (prob better to do for longer, but I was short on time and it still tasted great) - reduced sugar by half - instead of grilling, cooked in oven in cast iron skillet (skin side down) at 425 for 14 min, then broiled for 1.5 min. Saved a bit of reserve marinade sauce to sprinkle over top at the end

yummy, easy, and cheap to make. Love the sourness of the broth note: I omitted bean sprouts and parsley, and diced onions instead of cutting into strips

Restaurant-Style Zuppa Toscana

tasty and hearty. I felt the meat to veggie ratio was way too heavy, though, so I tripled the portion of kale. I also used Italian sausage (removed the casing) instead of smoked sausage As others suggested, I cooked bacon separately from onions (I cooked onions in the bacon grease)

Pollo (Chicken) Fricassee from Puerto Rico

Great flavor, and pretty easy (though time-consuming) to make. Tip: - Cook in dutch oven for 3 hrs on low heat instead of using a slow cooker - reduce the liquid. I used the amount specified in the recipe for 1.8 lb chicken (even though recipe calls for 1 lb), and still ended up w/ way too much sauce

Italian Sausage Soup with Tortellini

So yummy and hearty! I would make a few very minor modifications next time, but otherwise followed it to the T. 1) Use 2 cans (4 cups) beef broth, as I ended up w/ too much broth 2) Increased amount of veggies (used 3-4 carrots, 2 zucchini) and doubled the garlic 3) As suggested by many reviewers, I cooked only as much tortellini as I would eat in that sitting, so it wouldn't soak up all the broth

Mama's Italian Wedding Soup

Great recipe - tasty and very easy to make. Based on other reviews, I used more breadcrumbs and added minced garlic to the meatballs. Next time, I would also use more veggies and/or less broth, because I somehow ended up with a weird broth/meat/veggie ratio (i.e. too meat- and broth-heavy and not enough veggies)
