Hot and Sour Chicken and Cabbage Soup
yummy, easy, and cheap to make. Love the sourness of the broth note: I omitted bean sprouts and parsley, and diced onions instead of cutting into strips

Restaurant-Style Zuppa Toscana
tasty and hearty. I felt the meat to veggie ratio was way too heavy, though, so I tripled the portion of kale. I also used Italian sausage (removed the casing) instead of smoked sausage As others suggested, I cooked bacon separately from onions (I cooked onions in the bacon grease)

Herbed Green Beans
Pretty good, and easy to make. I pan-fried instead of microwaving, and also reduced the butter slightly. Came out great
