Cheesy Baked Eggs

This was great! I wanted to try something different for my husband and found this recipe. SO easy!! Since I only wanted to make it for him, I scaled the recipe down and used a mini ceramic loaf pan. I also didn't have cottage cheese so substituted ricotta cheese and used shredded cheddar instead of pepper jack. I also added sautéed mushrooms, spring onions, green pepper & 1/2 a diced peperoncini. My husband loved it!! It was finished baking in 30 minutes. I'll def be making this again!!

Tater Tot Taco Casserole

I really liked this dish, yummy and great leftover. My husband wasn't as crazy about it as me since he wasn't a big fan of the tater tots. I've done it a couple times though since it's a good weeknight meal.

Best Cream Of Broccoli Soup

I've made this recipe about 4 times now - so good! I do use only one pot though (mix the butter and flour into the onions after they're soft and let it "cook" for a little bit then add the broth and broccoli) and don't puree everything, just a couple cups to leave some chunks.

Cream of Mushroom Soup I

I've made this recipe for my husband about 4 times now and he LOVES it! I have used cremini & white mushrooms alone and also used a combination of cremini, white, oyster and shitake. He loves the one with the four mushrooms! Thanks so much for the super-simple recipe. Changes I made? I use 1 can of chicken broth which is a little more than 1.5 cups and I also use more flour to thicken.

Cranberry Pistachio Biscotti

So good and easy! I used a little more cranberries because I didn't have quite enough pistachios but they were delicious! The tip of wetting hands before handling the dough is essential and makes the process very easy! I used a large cookie/ice cream scooper to scoop out onto the sheet pan and then used my wet hands to form the logs. Will definitely make again! Thank you!

Chinese Chicken Fried Rice II

Great simple recipe! I can't believe how few ingredients there are yet it was delicious. I didn't add the chicken as I was serving it along with a chicken stir-fry. Will definitely be making again!

Make-Ahead Mashed Potatoes

I love this recipe. I first want to say that I've never done a make-ahead mashed and actually turned up my nose to many of other family members' attempts to do so. They just never tasted the same as the freshly whipped mashed potatoes. These are different, not quite the same but SO delicious. This recipe is now our go-to for any large meal. I've used it for my son's 1st Birthday party as well as a Thanksgiving meal and there weren't any left! So good and would definitely recommend.

Baked Pork Chops I

I tried this recipe last night for a change on the normal fried pork chops. I REALLY don't like cream of mushroom soup but my husband loves it so I figured I'd give it a try. The only changes I made is that I sauteed a small onion in the pan before adding the white wine (which I increased a little). I also decreased the baking time to 10/20 as my chops were boneless and not that thick. I'll definitely be making this again!

Juiciest Hamburgers Ever

We really liked these burgers, we don't like them well done but they ended up that way and were still tasty and juicy. Just a little heavy on the Worcestershire sauce for me.

Chocolate Cream Pie II

Awesome pie! I added the 1/4 cup bailey's and 2 3/4 cups milk like one of the other reviewers suggested and also used 4 tbles corn starch. I made sweetened whipped cream (1 cup heavy cream, 1 1/2 tsp vanilla & 2 tbles sugar) and it went so fast at my company party. Excellent and I'll definitely make it again! Thanks so much!

E-Z Marinated Swordfish

So good and so easy! I love lime so I added a little more lime juice and the zest. Made it with Asian Coconut rice and the combined flavors were AWESOME! Will definitely be making again.

Asian Coconut Rice

I made this last night with the E-Z Marinated swordfish, what a great combination - the coconut flavor was great with the lime flavor of the marinade for the swordfish. The only thing I did differently was that I added about 1/4 cup shredded coconut with all the other ingredients. I also think that 20 minutes was way too long, since it took so long to come to a boil it was a little mooshy, will cook it less next time. Will definitely be making again.

Chicken Tikka Masala

I made this recipe and shared it with friends - we all loved it although I also thought that it was a bit on the salty side; taking the other reviews in mind, I only used one teaspoon of salt for each part of the recipe; next time I make it I'll reduce that down to 1/2 teaspoon for sure. Definitely worth it though - SO tasty and so much easier than other Tikka Masala recipes I've seen.

Slow Cooked Corned Beef for Sandwiches

Awesome! I made this last night when I didn't really want to take much time on making dinner. I didn't have all day so cooked it in the slow cooker on high for 3 hours then cooked it on low for an hour. I moved it back up to high for the last hour because I added the veggies (potatoes, carrots, and cabbage) and they brought the temp down. Will definitely make this again - all the other reviews are spot on!

Bolognese Sauce

I really liked this recipe; it was very simple to make and yielded quite a bit. I wanted it a little more "saucy" so I added an extra can of crushed tomatoes and a can of tomato paste. Would make it again.
