Chayote Soup

Delicioso!!! I made this soup for the 1st time and was a hit!! I'm not a chayote fan but mom gave me homegrown chayotes from her garden. I didn't know what to do with them until I came across this recipe. I followed the recipe as written, just next time I will add only a pinch of crushed red pepper not 1/4 tsp. My mom and sons loved it. Definitely a keeper...

Apple Brine for Turkey the Night Before Cooking

Tried this on chicken leg quarters. Delicious!!! Threw in some bay leaves & peppercorns. No ice cubes just cold water and cut the salt to less than 1/4 cup and put in the refrig overnite. Grilled a few & some in the oven uncovered. I liked it grilled but LOVED it baked. Everyone was raving about the best chicken they ever had.

Baked Ham

The only ingredients I had on hand were cola, brown sugar and pineapple. So here is my version. Marinate ham(8lbs) in cola overnite in oven bag but do not poke holes in bag until ready to bake. Turn bag a few times throughout the process to insure "even-ness". Drain cola(since it's used only to tenderize) and add pineapple with juice and rub brown sugar on ham. I only added 1/2 the sugar. Delicious!!! This was the best Easter ham ever....

Bacon Wrapped Smokies

These were a hit at my Super Bowl gathering. My teenage son and nephew helped make these. No toothpicks needed. I cut the bacon in half. I bought both cocktail wieners and beef smokies. Both are delicious. Be sure to put foil and place on baking sheet for easy clean up.

Strawberry Oatmeal Breakfast Smoothie

This is good and filling. Reduced oats to 1/4 cup and no sugar was added. I only had 8 strawberries and it was still good. I blended the oats before adding the rest of the stuff. I will make this again. Kept me full for longer than usual.(maybe I will lose some pounds) LOL

Shrimp Scampi I

I made this recipe for dinner and it was delicious. No leftovers. I reduced bread crumbs to 1/2 cup and just a few sprinkles of lemon juice. No need to add 1 whole lemon juice. Didn't have white wine so I didn't add to the recipe and it was still delicious.

Juiciest Hamburgers Ever

These burgers were delicious!!! Made them for dinner and my entire family was complimenting me for great hamburgers. Followed recipe as is just added some garlic salt too. I was a bit skeptical about using evaporated milk but glad I did. Something about all the ingredients together makes the best burgers ever. Making again tomorrow(per family's request) LOL

Potato and Cheese Pierogi

Thumbprint Cookies I

Just finished making these delicious cookies. The only change made was the baking time. I followed other reviews and baked another 15min instead of 8min. Also, if you put jam in a plastic sandwich bag and cut a small hole in a corner, it'll be much easier to squeeze the jam out of it and not messy as using a spoon.

Mamaw's Southern Buttermilk Chicken

Just finished making this recipe. I followed recipe to the T. Chicken was moist but needs a bit more flavor. Next time, I will add 3 teaspoons of salt instead of 2 and less flour. For 10 pieces of chicken, this was way too much flour. I will try 2 cups flour.

This is my NO EGG version: I boil 3 cups water with 3 cinnamon sticks . Let it cool. Then put cinnamon water in blender w/1 can evap milk, 1 can condensed milk, 1 can coconut milk, 1 tsp vanilla extract and Rum (I use Malibu Rum/coconut flavor). Serve on the rocks & sprinkle lightly with ground cinnamon on top. Delicious..

Meatball Sandwich

Delicious and easy to make. I had most everything on hand except fresh parsley & baguette so I used dried parsley & long soft rolls. I drizzled olive oil on rolls and toasted them lightly on griddle. Fast and simple.

Easy Spinach Lasagna with White Sauce

Not a big spinach fan so I used fresh broccoli instead. Cottage cheese is what I had in the fridge so I used that instead of ricotta. Delicious!! My sons loved it. This is a keeper for sure. Next time I'll throw in some chicken. Now that the Fall/Winter seasons are around the corner, this will be a great comfort food.

Simple BBQ Ribs

I had never boiled ribs or chicken for bbq or grilling until today. OMG!! I will from now on. To the water I added soy sauce, garlic pwr, pepper and one onion cut in wedges. No salt. "Simmer" ribs for 40 min. I used beef ribs. No need to boil. Just simmer - low heat. Turn off stove, cover pot and let sit 2-3 hrs to marinate in broth. When cool, put ribs in large zip bag with BBQ sauce(I used Trader Joe's Kansas City BBQ sauce)Simply the best I'vd ever had. Put bag in fridge until the ready to bake or grill. We bbq'd the next day. Next time I will grill them & see how they turn out.

Pistachio Mallow Salad

This is so good. I made a few changes. Added pineapple tidbits(drained) instead of crushed. Loved the texture. Also added unsweetened shredded coconut and less marshmellows than what the recipe calls for. Didn't have food color so I didn't add. Next time I will try it with sugar free coolwhip combined with extra creamy cool whip.

Pistachio Salad

This recipe should not be followed as indicated. Do not prepare the pudding. Dry mix only. Do not add the syrup, it will be too sweet and soupy.
