Southern Baked Yellow Squash

This is a great recipe! I did not have an onion, so I pressed two garlic wedges and hoped for the best. It was great! Also- did not have breadcrumbs so I had to use crushed triscuits (for the topping) and Pepperidge Farm stuffing mix (herb?) from a bag that I crushed up. YUMMO!!!

Outrageous Chocolate Chip Cookies

This is a very forgiving recipe! I've added chopped pecans with good success. Warning though- they are tough to keep in the cookie jar- I've made them twice this week for my kids!

Zucchini Yogurt Multigrain Muffins

Not sure what happened to mine! I didn't have carrots so I left them out and doubled the zucchini portion. No nuts, so didn't use them or raisins. Otherwise, followed exactly and even used homemade yogurt. I also used pumpkin pie spice since I did not have pure nutmeg. They rose nicely then fell as soon as I took them from the oven. After the first batch, I added another tsp of baking powder and a bit more flour along with some chocolate chips and VIOLA! Yummo. not sure I will make again given my issues with the first batch, but my kids are enjoying them even flattened.

Banana Crumb Muffins

Excellent! I subbed 1/2 whole wheat flour and 1/3 applesauce. I also put the topping on at the end of the cooking time. Will def. be making these over and over!

Really Rich Banana Bread

This is a great banana bread recipe. I did add walnuts, but that was it! I did not find it too eggy as some other reviewers. I did use applesauce and only a little oil/ butter. I made this for my 89 grandmother- my own Mama B, and didn't even have but one super ripe banana- it was great!

Pumpkin Zucchini Bread

I give this 5 stars, but I changed a lot that resulted in a less than stellar product. That it still came out as good as it did, is AMAZING! My changes included: used one cup whole wheat flour and 2 white, used all applesauce and no oil, subbed pecans for walnuts because that's what I had. I also cut the sugar to one cup total, splitting white and brown. I added about 1/2 C more zucchini and pumpkin. To improve my final product, I will be adding back some more sugar, but that's it!

The Best Banana Bread

Very good and flexible! Subs I made include splitting the sugar with brown and white and using a multigrain cereal as part of the flour. I also used applesauce instead of the oil/ butter.

Strawberry Granola Squares

Made these last night- YUMMY! What I changed: I had fresh strawberries so I boiled them with some lemon juice and water for a loooooooong time and spread them over the granola bars. Took a lot longer, but sure tasted great!

Aloha Quick Bread

I made exactly as directed the first time and it is great! The second time I substituted coconut milk for the milk and it was even more moist and yummy. I took a couple of muffins to meet my son for lunch at his school and ended up breaking mine into a bunch of pieces to share with the kids. One little girl asked me if I would made it for her birthday cake! Another asked me if I could email the recipe to him mom! A huge hit. One word of caution- do not buy cheap canned pinapple. It doesn't taste near as good when you do this.

I ended up not following the directions because my cookie cutters were the wrong sizes, but just made plain old hearts for my son's school party. They were great! Very good basic cookie recipe!
