Baked Scallops

I just made these scallops and they were amazing!!! So easy to make and super fast! I just didn't know what to make for dinner and saw that we had some frozen scallops... found this recipe... and YES! I GOT A DOUBLE THUMBS UP FROM THE BOYFRIEND! I made them as instructed with the only differences being that I used frozen scallops, and minced dried onions because I didn't have the powder. I did dredge them in the butter then bread crumb mix first, then I topped with remaining mix. They were moist, crunchy and delicious... I highly recommend.

Catfish Cakes

These were very good. I had catfish in the freezer that I thawed out and baked the night before which made everything easier the next day. Everyone really liked them. I served them with steamed rice and garlic aioli sauce.

Basic Chicken Salad

This was a really good easy and delicious recipe. I added a little lemon zest and went a little easier on the mayo and added a bit of sour cream just because I wanted to cut down the calories.

Fresh Strawberry Upside Down Cake

This cake is awesome!!! I've made it twice now. The first time I made it it was for my boyfriends Mom's birthday!!! Talk about pressure!!! I made backup cupcakes in case the cake didn't turn out well. NO ONE TOUCHED THE CUPCAKES! Everyone LOVED this cake! I made it exactly as directed and it was awesome. I used a non stick baking pan and made sure to let it cool for twenty minutes before turning over on to a serving dish. I served slightly warm with French Vanilla ice cream and today my boyfriend and his sister requested it for dessert and once again it was great! Thank You for the great and easy recipe!
