Carrot Cookies III

I totally changed the recipe, but I am rating this on the combination of the flavors. I added the orange juice and zest into the cookie itself instead of making icing and it was fantastic! I would recommend putting the carrots through a processor and pureeing until they are smooth before putting them into the cookie, because if you happen to have a few clumps, they make the cookie taste a little doughy even if it is fully cooked. Love the taste of the carrots and orange together. Only changed the recipe to make a healthy cookie intstead of a regular one. Great recipe.

Tuna Rice Puff

Absolutely fantastic! I was pleasant surprised by this casserole. The only thing I changed was to add 1 garlic clove, crushed and grated and also grated a carrot and added some parsley. Very good flavor and fairly easy recipe to follow. Will definitely be making this again.

Banana Oat and Bran Cookies

definitely a good cookie after a couple of changes. Doubled the dry ingredients, added vanilla and subbed in 1/4 cup of peanut butter for 1/4 cup of the yogurt. omitted the brown sugar and used 1/3 cup of honey instead. Kids loved them.

Amazing Italian Lemon Butter Chicken

To keep the butter from seperating add some flour to the white wine and cream before it is hot, you won't have to reduce it as much and the flour will make the sauce thick. Basically you're using a roux to thicken the sauce.

Peanut Butter Carrot Cookies

These were a very tasty cookie. I had to add a little more flour so they wouldn't fall apart. Didn't have milk at the moment, so I subbed in sour cream. Very peanut buttery and the kids don't even notice the carrots.

Oat Bran Tortillas

Great recipe! I followed the recipe as close as I could, just didn't have any baking powder. Used a cast iron skillet to cook them and they puffed up beautifully even without th baking powder. Taste awesome! Thanks for the recipe!

Mashed Potato Soup

this recipe is a good base, but you definitely have to add more flavor. Like another reviewer , I added chicken broth in place of the water, added some fresh garlic, and carrots. Put in some tarragon and paprika and it was absolutely delicious. I would reccommend using instant mashed potatoes, though b/c they are a better thickener.

Holiday Avocado Stuffing

Just finished eating this stuffing and it is fabulous! Ended up omitting the water and putting it inside a turkey instead of baking it inthe oven by itself. Great recipe. Will definitely be making this everytime I cook a turkey!

Simple Whole Wheat Bread

This is the most tastiest bread I have made. Everyone loved it! the only change I made was to put whole wheat flour in the first part of the recipe instead of the white as another reviewer suggested. Great recipe!

High Protein Peanut Butter Balls

Just made these and the family was eating them before they even made it into the freezer! I had to make a couple of changes just because of my ingredients on hand. I didn't have any protein powder, so I put in barley flakes and oat bran. Only had natural pb, so I put in a tbsp of honey. Can't wait to try them after they've been frozen! Thanks for the recipe! Perfect for the kids. :)

Cranberry-Pumpkin Cookies

I just finished making these cookies. Very good recipe! I only gave it 4 stars b/c i made a couple of changes based on other reviewers having problems with it being too moist. I squeezed out the moisture from the pumpkin puree and omitted the baking powder and increased the baking soda by 1 teaspoon. Added a little bit of flax just for some extra nutrition. Thanks for the recipe!

Chicken Stock

Just made this stock, and wow! I am very amazed at what a little ginger will do to a recipe. I actually used a stewing hen. Didn't cut it up right away, just the legs to start off with. I sauted the carrots, celery and garlic added the chicken and water and boiled for 1 1/2 hours (longer b/c it was whole). I then took out the chicken and cut it up into quarters, took off the chicken breast and put the whole thing back into the water with some bay leaves, a little salt and the ginger. boiled it for another 2-3 hours. I didn't have onion, but i put in some green winter onion instead and it was amazing even still! I will never make stock any other way again. Thanx for an amazing recipe!

Oat Applesauce Muffins

love this recipe! I just made a batch (tripled the recipe) and they were awesome! I made a couple of changes. Used homemade applebutter in place of the applesauce, added some ground flax and added raisins. Definitely going to be making these on a regular basis.
