Swedish Cream with Summer Berries

Like others who have reviewed this recipe I replaced cool whip for heavy whipping cream (skipped the stove for this recipe), and orange extract in the place of flavored brandy. This was served chilled with Almond Shortbread I from this site. Yummy!!

I followed the recipe some of the cookies I dipped in chocolate other chocolate and chopped almonds. They were very tasty and enjoyed by the entire family. Very easy recipe.

Maybe it was me but I don't really think so. Adding strawberries could have been too much, this recipe lacked flavor and the standard "banana bread" texture.***UPDATE**The last time I used too much fruit. I tried it again following the recipe to the letter and it was much better. I added a star.

Sugar Cookie Icing

Nice and easy but mine did not keep it's sheen, after a hour the icing was dry but dull. It covered a lot of cookies. I used gel food color maybe this is why they were dull.??????

Easier than it appears if you're not looking for perfection but fun with the kids. I used tubed writting icing from a craft store for the eyes, whiskers and nose. Well I had fun! Oh I used a toothpick through the back of the ears, pinching them together and pushing the toothpick between the two so I could grasp some marshallow. I pushed the pick far into the cupcake to conseal.
