apple pie, pot roast, roast chicken, pumpkin bread....i love to try out new recipes....and it's great when hubby really likes something new (he's VERY picky...lol)
My cooking tragedies
a few years ago on Thanksgiving i had a houseful of guests....the turkey was beautifully basted...i went take it out of the oven so it could rest while we finished the balance of the dinner AND when i went to open the oven door...it would not budge....the springs on the oven door had had enough & they broke...instead of freaking out i asked my brother-in-law to remove the door with a screw driver & put the door outside....it was a day the family will never forget!!! P.S. dinner was great!!!

Old Irish Scalloped Potatoes
I added slightly less butter and left them in the oven for an hour. They needed a little time to "set-up", so I left them on the counter for about 15 minutes before serving. They were really good with our corned beef on St. Patrick's Day!

Orzo with Chicken and Artichokes
Excellent. I had dribs and drabs of all of the ingredients (except pancetta, which I substituted with prosciutto and the pine nuts which I left out) in the fridge from the past week's meals. I didn't measure anything, I just winged it!!! Will definately make again. Leaving out the chicken would also make this a nice side dish!

Basic Buttermilk Muffins
Great basic recipe. I reduced the flour to 2 cups per another reviewer. >>> 03/02/12 APPLE MUFFINS: Added 1 cup peeled/chopped apple, 1/2 cup raisins & 1/2 tsp cinnamon. Very, very good. Next time I'll up the cinnamon to 3/4 tsp. >>> 03/06/12 DATE NUT MUFFINS: Replaced white sugar w/brown, reduced nutmeg to 1/4 tsp. Added 1 cup chopped dates (which I soaked in 3 Tb hot water), 1/2 tsp cinnamon, 1/2 cup walnuts & 1/2 cup raisins. Perfect!
