Spicy Chicken Breasts

DELISH! I didn't have cayenne pepper so I squirted some Sriracha hot sauce and threw in some red pepper flakes (I LOVE SPICY FOOD). I also cut down on the salt and added olive oil to make a marinade. I marinated it overnight and threw it on the grill and WOW! it was spicy but flavorful and delicious! I loved it so much that I am marinating another set in the fridge RIGHT NOW. Awesome recipe :)

To Die For Blueberry Muffins

as I sit here rating this recipe as I munch on the finished product, all I can say is, "YUMMMMMM". I didn't use oil as the recipe calls for, I used apple sauce. I also used less sugar in the batter and did half white and half brown sugar. The topping is VERY sweet, so you can skimp a little in the batter. WILL make again! :D

Oatmeal Raisin Cookies I

I used whole wheat flour instead of AP flour. I also cut down on the sugar a but and I definitely didn't miss it. The cookie was still sweet. It was still delicious! Next time I'll try boiling the raisins. :)

Mmm-Mmm Better Brownies

I doubled the recipe and left out the walnuts. I also added more cocoa powder and less sugar to make it more chocolatey. I realized after I put it in the oven that I forgot the baking powder. It still turned out delicious. It reminded me of a flourless chocolate cake. YUMMY

Chocolate Chip Banana Muffins

DELICIOUS! I used 1 cup of AP Flour and 3/4 cup of Whole wheat flour and put in only 1/4 c of cannola oil. I also used vanilla flavored soy milk instead of the yogurt and used light brown sugar instead of white sugar. My family loves them!

Chocolate Surprise Cupcakes

these were yummy but I couldn't really taste the cream cheese center! I frosted half w/ a cream cheese frosting that I added peppermint extract to which gave them a fresh taste. I frosted the other half w/ a plain vanilla frosting and they also tasted good.

Low-Fat Blueberry Bran Muffins

these are good. I used vanilla soymilk instead of milk and I used one cup of WW flour as opposed to half WW and half AP flour. The first time I made these, I used blueberries. The blueberries burst and made the muffin soggy and did create an ugly green color. The second time, I used mini chocolate chips and the muffin wasn't soggy and was delicious! Granted, it's not as healthy, but it was yummy!
