Not sure how this could get a low review. I love coconut custard pie, so when I saw that all you have to do is stick all the ingredients in the blender for prep - I had to give it a try. Tastes darn good so far. I'm sure it will be even better when it has a chance to fully cool. I was impatient so I had to sample it warm lol. I did not have any (dairy)milk on hand so I used rice milk. I only had butter, which I used out of the fridge cold (should this have been softened or melted?) Also, my blender is broken so I used my immersion blender and that seemed to work fine. The center was still quite jiggly at 45 minutes, so I left it in for another 5-10 min. Does it taste EXACTLY like a made from scratch coconut custard, not quite. But the recipe is so fast/easy to prepare it makes up for it. I will definitely be making this again.
