Fudgy Brownies I

Gave this a 5 because I can finally say I can bake a brownie from scratch that is delicious! Only had whole wheat flour so I reduced it to 1/2 C. Also used 1 1/2 C sugar and 1/2 C splenda (ran out of sugar but since this worked well and reduced the calories slightly, will likely do it next time as well). Definitely reduce baking time if you like them soft and chewy.

Mall Pretzels

Merlot-Peppercorn Steak Sauce

I appreciated how quick and easy this was to add to some steaks pulled last minute from the freezer. Was way overpowered by peppercorns though, and my husband and I love pepper. Will definitely try this again, with reduced pepper of course! Thanks for sharing it.

Chris' Bay Area Burger

I have made some great burger recipes, but they are all so complicated and loaded with expensive ingredients. This one is hands down, the best "simple" burger that I have come across. It takes you back to what a burger should be about....the meat! Only having cheddar in the house, that's what we used in addition to fresh tomatoes and lettuce topped of with a touch of mustard and ketchup. (I did reduce salt to just under 1 tsp and found it plenty). This is my new go-to recipe for exceptional taste, easy prep, and basic ingredients I always seem to have around. Highly recommend it.

Cheesy Breaded Chicken

Nice to find breaded chicken that does not require pan frying first and with such few ingredients, so quick to make at the end of a long day. I ended up changing the recipe only because of the ingredients I had available. I crushed up multi grain garlic croutons and added grated parmesan, to bring the volume up, as well as salt and pepper. It was fantastic; even my 2 1/2 year old that lives on air and crackers loved it.

Lentil Chili

I have been trying to integrate lentils into my cooking and this did the trick. Sautéed onions first, added portobello mushrooms, and increased the spices a little in addition to adding smoked paprika. Did not have an issues with the volume of sauce as other reviewers mentioned. I am thrilled to find such a healthy meal that freezes beautifully...although it might be eaten before it truly freezes!

Chocolate Peanut Butter Bars IV

I gave it five stars due to the simplicity of such a delicious treat; a fun rainy day moment with two young kids. I used almond butter rather then peanut butter since that is what my family seems to prefer; and the idea of adding 1/2 cup of it to the melted chocolate is brilliant. Rich flavour of chocolate without all the cracking when serving. Definitely take the time to precut squares 15 minutes after placing in the refrigerator to make it easier. Even though I reduced the icing sugar to 2 C, I will cut it even lower next time...perhaps because I used semi-sweet chocolate on top. My sweet tooth, as powerful as it is, was surprisingly a touch overwhelmed. Will keep this one around for when the little ones have an urge to "bake"!

Three Amigos Salad

What a refreshing change on "fruit salad" one usually finds at a brunch. I used really ripe mangoes and grapefruit, giving plenty of juice to the salad. I am not a fan of avocados, but the combination of the three is spectacular. This dish now a regular addition to our Saturday morning waffles.

The Best Meatloaf I've Ever Made

Having been on the hunt for a good meatloaf recipe for some time now, I am thrilled to have found this one. I took the suggestions of other reviewers and added maple syrup rather then milk, Italian seasoning to the bread crumbs, and mayo instead of sour cream (we never keep sour cream stocked in our house). Although moist, it held together beautifully. I topped it off with a glaze (1/2 cup ketchup, 4 tbsp brown sugar, 3 tbsp whit vinegar) when I turned the oven temperature up for the remaining 15 minutes. Perfect. Will stop the hunt with this one!!

Amazing Whole Wheat Pizza Crust

Have never attempted home made pizza dough before for fear of being disappointed. This recipe sets a new standard for delicious!! I used 3 cups multigrain best for bread flour, added basil and Italian seasoning, and followed the suggested baking at 500 for 5 minutes, applied topping, then continued for 12 minutes at 450. Perfect!! I also misted the dough with water at the 2 minute mark to ensure a really crisp crust, leaving the inside soft. Honestly, will never try another recipe for pizza dough and will definitely think twice about ordering take out! Thank you Marla!

Chewy Chocolate Chip Oatmeal Cookies

I used whole wheat all purpose flour, was careful not to over mix the dough, and refrigerated it prior to putting it in the oven....turned out amazing!! Dare I say they rival the ones my Grandmother used to make!
