Blackened Tuna Steaks with Mango Salsa

This was just as good as a restaurant dish. I cut down on the Cayenne as suggested by others. Next time I will cut down the cooking time, as I like mine still swimming. Thanks for the help.

New York Chicken

This was an ok recipe. I would say this is an upscale Mushroom Soup and Chicken recipe. I liked it, and the chicken was tender, but I don't know that I would make it for company. Sorry.

Too Much Chocolate Cake

Wow...I can not believe this recipe turned out sooooo well. Very moist, and light, and fluffy, and so chocolatey. Awesome recipe. I can't wait to try with other flavors. : )

Garlic Cheddar Chicken

I baked mine for 25 min. Nice and crispy on the outside, tender and juicy on the inside. Fast and easy, and all the ingredients are on hand. Thanks for sharing.

Cinnamon Crackle Cookies

I am a tough cookie critic, my only criticism is there are only five stars. This recipe has earned its place in my top five favorite cookie recipes. I baked my cookies for 9 min, as I like them a little chewy. I flattened them a little, but I will skip that step, as I think they will spread just fine. My husband just came in from two hrs of clearing snow in -25 (-10F), he thought the house smelt heavenly.

Big Soft Ginger Cookies

Easy recipe, tasty cookies. I made a few changes as suggested. I substituted brown sugar for white, used Grand Marnier instead of water, and kicked up the spices a bit. I didn't think they were overly sweet, and would not skip rolling them in sugar. The cookies were exactly as described, Big Soft Ginger Cookies. Yum

Christine's Coffee Liqueur Cookies

I was a little disappointed by this recipe. Just out of the oven the cookies were great. A little crispy on the outside and a little chewy on the inside. The Coffee Liqueur flavor was subtle. The next day the cookies were really hard. I might try more brown sugar next time. I may also increase the coffee liqueur. My rating would be 3 stars, but it appears that my husband loves hard cookies, so the rating increased to 4.

Golden Baked Chicken

Tasty and easy recipe. I thought this recipe would be similar to baked chicken using Panko, but the texture was closer to fried chicken than any other recipe I have used. This recipe is worth making the trip to the store to buy the potato flakes.

Mustard Crusted Tilapia

We are trying to eat a little more healthy, and I think this recipe fits the bill. I doubled the sauce, and used Panko. I only had Dijon Mustard, and it was great. Maybe I will triple the sauce next time. We loved this recipe.

Pork Tenderloin with Mustard Sauce

This recipe was good, but didn't rate being our next family favorite. The sauce was great, but I think the cooking time for the pork was excessive and caused the pork to be a little on the dry side. I will use the sauce again, but I will pass on the marinde. Sorry.

Unbelievable Chicken

I stuck to this recipe, except for the fact that I used Apple Cider Vinegar. The chicken was tasty, and moist, but the Cider Vinegar was a little over powering. It was a nice change from the regular boring grilled chicken I BBQ. I will try again with just Cider Vinegar.

Twice-Baked Mashed Potatoes

This was really tasty. The potatoes puffed up and were really fluffy. I was lazy and used Hormel Real Bacon from Costco and the flavour was still real nice. I can't say I can think of a way to improve on this recipe. We will be enjoying the leftovers warmed up tomorrow. Thanks Margaret.

Lemon-Dijon Chicken

This was not horrible, just not that great. The chicken was moist, but the flavour was a little dull. The potatoes were dry, I had to add more oo in the midst of cooking. Maybe this would be better on the bbq.

Oven Fried Parmesan Chicken

Excellent!!!!! My very picky family just loved it. My 22 year old daughter wants the recipe....for her boyfriend to cook for her. I had to use panko, as I was out of bread crumbs, but I am sure it would be just as good with bread crumbs, maybe even better, as the bread crumbs would absorb more of the butter. Thanks Judy.
