Veggie Pot Pie

BEWARE THE CRUST! I couldn't give it less than 4 stars because maybe it was my error--used store bought crust and it was raw! Left in in an additional 10 mins and was beautifully golden, but the bottom was a raw, soggy mess. Stay away from Trader Joe's crust. It also wasn't big enough for a 9" pie plate though that's what it said to use. However, the filling was delicious. I'm going to throw some beans in with the leftover filling and make some biscuits to crumble on top.

Vegetarian Cassoulet

I was really looking forward to this, and had to go to a few stores to find the herbs. I followed recipe and ended up with a bland, brown dish with undercooked beans. Maybe it was a fluke with my specific ingredients (since others had better luck), but it didn't work at all. How it could be so tasteless with all those herbs is beyond me. The cook time was way too long for the veggies, they should have been added once the beans were finished. Pricey too.

Best Ever Muffins

Bland! I don't know why these are quite so popular. Not particularily sweet or flavorful. I added apples, cinnamon and vanilla and they taste like bread with a hint of flavor. Very unimpressed. Needs more sugar to start.

One Egg Lemon Pound Cake

Very good, despite my best efforts to mess it up! The loaf baked so slow--had to keep putting it back in for 10 mins at a time. Finally ended up at 75 minutes, then it wasn't jiggly in the middly anymore. It's moist and tender. I added the zest of 1 lemon, and used cake flour. And one of those cheap foil pans because I didn't have an 8x4". It came dangerously close to overflowing, I think a 9x5" would have worked. I would definitely recommend this recipe. Thanks!

Black Bean and Salsa Soup

Thank you for this recipe! Delicious and easy. I wanted to use up most of the salsa & broth so I made a recipe and half. I too kept about 1/3 beans unblended for texture, and added a drained can of Mexicorn. The corn added more nice flavor & texture.
