Butternut Squash Risotto

A wonderful sidedish! I'd never made risotto before and always wanted to. Directions and timing were Right On! The only thing I did differently was that I substituted baked hubbard squash for the butternut because it was what I had on hand. When I mashed it I left a few lumps in it. What a wonderful dish. My husband, a certified vegetable hater, loved it. Definitely FIVE stars!

Green Beans with Cherry Tomatoes

Such a surprisingly good side dish! I first had green beans like this as a side dish at a small restaurant in North Myrtle Beach, SC. We were told it was a "restaurant specialty," so when I found the recipe here on AR I was anxious to try it. The only thing I changed was to add some fresh minced garlic instead of garlic salt. Absolutely delicious!

Chicken Marsala

I love this recipe! It's so fast and easy and delicious. My chicken breasts were quite thick so I slice them in half before pounding them to 1/4 inch thickness. I put just a little extra oregano in the flour mix, maybe 3/4 tsp. I used a mixture of mushrooms, shitake, crimini and buttons. I served it with garlic smashed potatoes and tender crisp broccoli. Yummy, yummy! But alas and alack, there were no leftovers :(.

Mild Cheesy Chicken Enchiladas

Way too bland! Where are the flavor adders here? I knew when I read this recipe that it needed jazzing up. Here is what I did: To the chopped chicken and onions I added a can of chopped green chilies, and about 1/2 cup of shredded mozzarella cheese. In a separate bowl I mixed two cans of green enchilada sauce and 1/2 cup sour cream, poured about 1 cup of that mix into the chicken mixture and mixed it together. Sprayed a 9x13 baking dish with Pam and pour about 3/4 cup of the sauce on the bottom of the pan. Fill each tortilla with the chicken mixture and roll, placing seam side down in the dish. Pour on the rest of the enchilada sauce and top with two cups of shredded cheese. Bake 30-35 minutes in 350 preheated oven. Top with chopped green onions or (my personal favorite) freshly chopped cilantro. YUM!

Healthier Sloppy Joes II

I needed to use what I had on hand because I was trying to clean out the frig at our lake house. Since this is such a great recipe for use of staples I had everything on hand. Now I know that I will never need or want to buy canned sloppy joe mix again! Plus because I had the windows open while I was cooking I had neighbors coming over to find out about the wonderful aroma coming from the kitchen.

Bacon Corn Chowder

Very good! I used skim milk to lighten it up a bit. My husband also really liked it and asked me to make more of it next time. I'll definitely double the recipe next time.

Ratatouille Bake

Excellent! My husband detests eggplant. Doesn't even like to be in the same room with it! But he had two helpings the first night, and when we reheated the leftovers the next night I had to fight for my share! I already bought the ingredients to make this again. The only change I made was instead of the basil and parsley I used a generous tablespon of Italian seasoning. Yummy!

Hamburger Steak with Onions and Gravy

As a really good "comfort meal" you can't beat this. We had a cold dreary, rainy, early fall day and I made this for dinner with some mashed potatoes, green beans, and Eggplant Bruschetta from this site. Everyone practically licked their plates. Even my three year old grandson, who is very skeptical of everything said "I like this meat!" A keeper recipe for sure. I did double the gravy because who doesn't want extra gravy on mashed potatoes!

Eggplant Bruschetta

This turned out good, but not special. Like Naples 34102, I added oregano and fresh garlic to the tomato mixture along with the other items in the recipe. And I baked them instead of broiling them. It's good enough to make again. But I won't be expecting a 5 star sidedish.

Marinated Grilled Shrimp

Really enjoyed this! I looked at a few different recipes for grilled shrimp but I chose this one because of one of the other reviewers. I always trust anything Naples 34102 rates a 5 star. She recommended following the recipe exactly and that's what I did. It worked wonderfully and made a BIG splash at the next door neighbors cookout. Because we are right next door I was able to wait until the very last minute to put the shrimp on the grill and have them ready when all the other guests were ready to begin eating. And such Ooohs and Ahhhs they caused! Such a simple and wonderful recipe! And in the unlikely event that there may be leftovers-well, these shrimp are even good served at room temp. Don't know about serving them cold, they didn't last long enough!

Blueberry French Toast

Sooo good! I changed a few things to make this a little healthier. I used egg substitute to lower the cholesterol #'s, I used whole wheat bread, and put lots of cinnamon (very high in antioxidants) all over the bread mixture, and I used more than the recommended amount of blue berries. In the sauce I only used about 1/3 cup sugar and I think that made the fresh blueberry flavoe really come through. I recently read that blueberries are the healthiest things on the planet to eat. So I'll make this again and again

Restaurant-Quality Baked Potato Soup

Really, really good! I needed to make it lower in fat so here is what I did-I used 8 ounces lower sodium bacon and coarsely diced it before crisply frying it. I only used one cup potato flakes, used skim milk instead of half and half, and used low sodium, fat-free chicken broth. I put the bacon right into the soup before the second simmer rather than just using as a garnish, and I skipped the cheese entirely. Oh, and I mixed the cornstarch in with the water before putting it into the soup. I will make this again and again.

Sweet Potato Casserole II

This is really good! But a whole cup of white sugar is a really unwise choice for so many of us. I used 3/4 cup pure maple syrup instead and it came out wonderful!

When I told him what was for dinner, my husband's first question was, "Am I going to like that?" When I served it his comment was "You can make this anytime you want to!" There wasn't a morsel of leftovers so I think I'll double the recipe next time.

Yummo! Like some of the others, I used ground turkey breast instead of ground beef. But other than that I followed the recipe exactly! What a keeper! After just one bite my husband declared it "Delicious!" It's super easy to prepare. I'll make it again and again!

Garlic Prime Rib

I was sooo pleased with the way this turned out! I used a 4 1/2 pound roast, so I cut down the marinade accordingly. Other than that I followed the instructions exactly. It turned out absolutely wonderful. I served it for Christmas dinner to my son and his family who hadn't been able to be home for years. I couldn't have asked for it to be better! Thanks for sharing the recipe!

Nutty Apple Crisp

I was concerned about making this the first time because it was to be dessert for company. And of course, no one recommends trying a new recipe when company is coming for dinner! But this one certainly didn't disappoint! Super easy and just delicious. We liked it so much I made it again three days later for different dinner guests!
