Simple Scones

This is perfect for basic scones. They come out light and soft and not too dry, and it would be a great base for either savory (cheese, bacon, and green onion would be really yummy) or sweet (with the addition of vanilla and/or almond extract). The only things I changed were chocolate chips instead of raisins, patting out instead of rolling out, and I forgot to sprinkle sugar on top before baking. But very yummy!

Apple Pie by Grandma Ople

I made seven or eight little hand pies and a 7" pie with this. Instead of a lattice top I cut out pie pastry leaves and laid them out around the edges. This is so easy and heavenly! It's a relief to find such a fantastic apple pie recipe that doesn't have corn starch in the filling.

Dark Chocolate Cake I

This cake is very dense and rich. If you happen to run out of unsweetened cocoa powder and have to use half a cup of Dutch process cocoa, it's okay.

Easy Lemon Cookies

I used a French vanilla box mix someone gave me and put in a little vanilla extract and some lavender essence instead of making a lemon one. Very good! Some box cake mixes are very, very sweet, though, so choose carefully.

One Bowl Chocolate Cake III

I agree that it would be better with more cocoa in it (but I ran out of cocoa right before I could test it!). It's really quick -- 15 minutes to put together and it only took 25 minutes to bake in my admittedly weird oven. You really need to make sure you grease the pans well, or it'll come out messily (easily covered with frosting). It took the same amount of time to bake in cupcakes as it took to bake in two 9" pans, which is weird; it's also great with a couple of dashes of cardamom and a bit of cinnamon.

Good Old Fashioned Pancakes

I'm nearly 22 and I've never made normal pancakes (only Swedish ones), so this began with a little trepidation. Typically, non-Swedish pancakes seem heavy and thick to me, but these ones were lighter and fluffier than I predicted. I didn't have a sifter so I whisked the flour mixture in the bowl.

Light Cheesecake

Ice Cream Scones

This turned out pretty well, despite not having self rising flour (instead I used 1 1/2 tablespoons of baking powder and 1/8 teaspoon of salt per cup of unbleached flower). It wasn't holding consistency very well so I added a little more flour. In addition, I added 2 tablespoons of vanilla extract, 1 cup of peanut butter, and about half a cup of chocolate chips. My roommates devoured them! Adding more flour made them take about 25 minutes or so in the oven (we also don't have a kitchen timer). Can't wait to try it with other ice creams!
