Rye Borscht

I followed your directions, except added canned white northern beans with the vegetables, instead of the cannellini beans. (The dry beans probably would have been better if I had them.) We never had borscht before. It was pretty good, but I expect it is an acquired taste. We'll have plenty of opportunity to find out, as it made enough to last us for a couple of weeks. There are just 2 of us. Anyway, thanks for the recipe. It was fun trying something different. Mar. 14 update: I put some of this in freezer containers and saved. My husband and I happily did acquire a taste for it, and now we love it. Just had some for lunch today, and my hubby asked, is that all? There wasn't enough left for seconds. :) Have to increase the rating to 5 stars. Congratulations for a distinctly unique and very delicious recipe! Now I have another good use for all my rye berries.

Best Cream Of Broccoli Soup

Just made this for dinner with some crusty hot rolls. It was a hit! We loved it on this chilly FL nite. Used canned milk. Flavor was really good.

Bacon Ranch Pea Salad

I made this for dinner tonight for my husband and myself. It accompanied my homemade potato soup. I used the petite peas and barely heated them through so they were still crunchy. I totally forgot to add the cheese, but we didn't miss it. We both loved it! In fact, there was only a cup or so left after dinner. I can't believe the two of us ate almost all of it. It is definitely a keeper.

Breakfast Prune Spice Cake

My husband and I love this cake! It is moist and delicious as well as beautiful. I like to change recipes to make them healthier, so for the fat, I used 1/2 cup unsalted butter, about 1/4 cup coconut oil and about 1/4 cup unsweetened applesauce. For the flour, I used a mixture of white wheat grain, oats and flax that I ground in my VitaMix. I used brown sugar and baked in a large bundt cake pan (see photo above). Otherwise, I followed the recipe exactly as written. It was the first time I have ever tried prune cake and I was delighted! I will use this one a lot. It is wonderful with herbal tea. Beet Salad with Goat Cheese

We loved this salad. I just used what I had on hand, so I used fresh beets, the maple walnuts as directed, romane lettuce, sliced scallions, hemp seeds, apple cider vinegar, and feta cheese. Added diced chicken tenders, and it was delish. Will use this from now on. Thank you, Donna, for a great tasting and nutritous dinner idea.

Zucchini Crustless Quiche

Delicious zucchini quiche. I followed the recipe exactly, except it only took 45 min. instead of 1 hour. Probably because I have a large quiche dish and it was thin. My husband had the leftover quiche for breakfast and loved it. However, I have another zucchini quiche recipe that has bacon in it and I like it slightly better.

Gobble Up Granola Snacks

Thanks for the great recipe. It is excellent...and easy. No baking required. I followed the recipe with a few changes: I used only 1 cup oats, plus 1/4 cup wheat germ, 1/4 cup sunflower seeds, 1/4 cup sesame seeds, and 1/4 cup flax seeds. I used honey in place of corn syrup and golden raisins. They held together well and were delicious! Next time I will use less sugar, as the honey adds more sweetness than corn syrup.
