Caroline's Chocolate Fudge Frosting

I made this frosting on a cake for my granddaughter's 10th birthday yesterday and it was the best ever. I made a chocolate cake and used the German Chocolate cake recipe, except used 4 squares of unsweetened chocolate in place of the German Chocolate. Everyone raved about the cake and the frosting. I especially liked the frosting because it wasn't real sweet. It was very easy to work with and not at all what I expected. Even the little ones wanted to savor the cake because it was so good! From now on, this is the only frosting I will be putting on cakes.

Cranberry Upside-Down Coffee Cake

This coffee cake is FANTASTIC! I made it yesterday and had nothing but rave reviews on it. I did add the orange zest, but other than that, I followed the recipe exactly. I will definitely be making this again and again!

Caramel Popcorn Balls

This is an excellent recipe. I did make a few changes. Instead of 2/3 cup sweetened condensed milk, I used the whole can. (I don't like leftovers.) I used the Power Pop Microwave popper and did 5 batches of popcorn. I sprayed the pans that I used for the popped popcorn with Pam and then you don't need to butter your hands. I also kept the popped popcorn in the oven at 200 degrees until the caramel was cooked. I also cooked the caramel in the microwave until it was a medium hard ball when tested in ice water. This cuts the cooking time at least in half.

Sweet Dinner Rolls

This recipe is definitely a keeper. These rolls are so easy to make, plus no kneeding! I substituted one cup of whole wheat flour for one of the cups of white flour. Excellent!

Thai Grilled Beef Salad

I felt this dressing had too much fish sauce in it. My husband is on a low sodium diet and it was quite salty. I also added some rice wine vinegar and pepper flakes. Other than that, it had a very good flavor. It is surprising how the flavors blend. I'm not sure I would try it again.

Easy and Good Honey Mustard Salad Dressing

This is definitely better than any you buy at the market. I used the portions one other person suggested for three servings. I added 1 tbsp. cider vinegar and a little less honey. It was very good and very fast!
