Downeast Maine Pumpkin Bread

Great recipe and thank you for sharing it. This is one of the tastiest, easiest breads I have tried to date. The aroma while it was baking drove my husband crazy. I didn't have any oil (other than grapeseed), so I used 1/2 melted butter and 1/2 greek yogurt. I don't like to change a recipe before I test it, it was just done out of necessity. I doubled the recipe because I had a 28 oz. can and baked 2 - 9 X 13 pans for 70 minutes. Yum this is a keeper!

Banana Pancakes I

The flavor is amazing in these pancakes. The only thing I found was, they stuck to my pan a bit more than usual. I added the usual spices cinnamon, nutmeg and added vanilla. To keep my husband happy, I threw in some frozen blueberries. The combination was great. Thanks for the great recipe!

Chococonut Chip Cookies

These are the best! If you love coconut and chocolate these are perfect as they are. Soft and chewy with a hint of chocolate, they disappear almost as fast as I can make them.

Big Soft Ginger Cookies

These soft and chewy cookies are a big hit with our family and friends. i even get requests throughout the year proving they are not just for Christmas. They can be rolled in sugar and cinnamon like Tom Thumb doughnuts or baked as is.

Chewy Peanut Butter Chocolate Chip Cookies

This has become one of my standby, make a quadruple batch of cookies. I usually go heavier on the peanut butter though. Sometimes I leave out the chocolate chips altogether and place 1/2 a peanut in center of each cookie for plain peanut butter cookie, or, leave out chips and add cocoa to the dry ingredients. (they become penguin or reindeer poops at Christmas time.)Who doesn't love chocolate and peanut butter. Just don't flatten them. If you happen to have a 1 inch cookie scoop use it, such a time saver.

Byrdhouse Dream Salad Dressing

Couldn't be easier to make and it has a wonderful light clean taste to it. The only changes I made was to add 1 Tbsp. of frozen grated ginger, and I was out of Marjoram and had to substitute it with some Greek Oregano. Thanks for sharing this one!

Caryl's Blonde Fruitcake

This is a great recipe to do up as Christmas gifts. A little labor intensive, but nothing beats a gift from the heart. Top the cakes (before baking) with extra fruit and pecans in a festive design. Extremely dense and full of flavor, you get fruit and nuts in every bite. The batter looks like there is more fruit than batter but it holds together perfectly. Brandy glaze intensifies the flavors and permeates the cakes as they age.

Spanakopita

This is probably the best spinach pie I have ever tasted. Mercede brought the original recipe home from a Greek restaurant she worked at on the Island and I tweaked it to suit us. Trust a YaYa to give you the best recipes. Use the frozen spinach if you have to, but you cant beat fresh for flavor. I also make the individual pies by cutting the philo into 3 long strips, and following the directions for a "flag fold."

This is a chef created, but easy to make, main course salad. A great "Wow, you made this?" meal. Perfect for a lunch or dinner with your favorite girlfriends, (or the future Mother in Law)

Guacamole

This recipe is pretty much identical to one I have been making for 29 years. Shown to me by an old amigo from Mexico City, it is authentic and delicious. You wont need to change a thing unless you want fresh jalapenos instead of the powder.

Victory Brownies

I was looking for hazelnut recipes when I found this one for brownies.I loved this recipe, as did everyone that tried them. I doubled the recipe to fit a 9 x 13 pan and added extra orange zest and cayenne as well as the leftover hazelnuts from a homemade frangelico recipe.(I couldnt bear to waste them them)Extra Bitter chocolate didnt hurt it either.
