Eggplant with Garlic Sauce

Yummy AND easy! Instant winner. I made some seemingly popular modifications, veggie stock instead of water, three cloves of fresh garlic instead of powdered, and doubled on the soy sauce since I didn't have oyster sauce. But I also only had a big Italian-style eggplant, which I cut into 1-inch cubes, rubbed with salt and lemon pepper before throwing them in the pan, and subbed in 2 teaspoons of Stevia for the sugar for a low-cal modification. Served over brown rice - awesome!

Chickpea Curry

Whoa. This recipe sounded great to me, but I was a little worried about the entire teaspoon of cayenne I was told to put in. I was going to just cut it to half, but after reading through the other reviews and essentially feeling like I was being called a chicken if I didn't put all the spice in, I decided to show them what's what. Ouch. Maybe it's that my cayenne came fresh right from the organics department, so it had some zing to it, but I ended up adding an extra 15oz of garbanzos to try and soak up the spice. No luck. I'm still hurtin'. So if you've got quality ingredients, and a fainter heart than a Bengal Tiger, you might want to ease off the cayenne just a tad. Otherwise, great!

After-Thanksgiving Turkey Soup

Excellent, creamy, post-thanksgiving problem-solver! I'd even rate it over my dad's version, but don't tell him I said that. Tip: try adding rosemary and sage to the carrot/onion/celery mix, and substitute lentils for rice! Makes for a slightly healthier option, and delicious to boot. Thanks for sharing!
