Beef Chimichangas

The meat for this was outstanding, I thought. Had never heard of adding vinegar to cooked ground beef before! I used large flour tortillas instead of corn since I've always known chimichangas to be made with flour. Was able to make 7 good-sized chimis with flour tortillas. They worked out perfectly, no falling apart. However, I've made similar recipes using corn tortillas and the trick to sturdy corn tortillas is to fry each one for about 30 seconds, as stated in this recipe also, so they are pliable but not wimpy-soft. I also had to use plain Greek yogurt in place of sour cream - worked like a charm. When reheating, use toaster oven or pan-fry on low heat to recapture outside crisp.

Russian Style Creamy Salad Dressing

Thought this had a really good balanced flavor as written. Didn't have cream and was out of milk, so I used about powdered milk and water. Didn't notice anything missing from flavor, consistency, or texture. Can imagine the flavor will be even better tomorrow. Thanks for such a quick, basic, easy recipe.

Asian Chicken Salad

This was outstanding! I served this one night when I had a dinner guest. I prefer to use Napa cabbage when making this type of salad, and also used the prepackaged Chinese fried noodles. I also used sesame oil and it definitely adds to flavor! Will make this over and over!

Buffalo Wontons

These were fabulous! My whole family loved them; we ate them as a main dish. I tried baking one batch and decided to fry the rest because the baked ones were a bit tough and chewy. I definitely put enough olive oil before I baked them, too. I cut the butter by half, as some recommended, otherwise made exactly as directed. I was also careful to measure the amount of chicken in the wonton wrapper and it worked perfectly. Don't like how time-consuming it is to make, but it is worth the outcome!

Mr. Bill's New Mexico Buffalo Chili

5 stars due to the dry seasoning alone - it truly carries the chili in my opinion (and maybe the beer?). MEAT: Dry seasoning is spectacular - the cocoa seemed to enhance the other seasonings and add a little twist. I had time to marinate meat for only a couple hours so I can imagine how much better after several. I only used ground beef and turkey due to cost of listed meats. Meat was also nicely "tenderized" so that any gristle was unnoticeable (the one barrier to my loving meat!). Bacon was perfect to round out the chili; I really think this could use more than 2 slices though. I did fry onions and meat in bacon grease as recommended - yummy!!! BASE: I like that this didn't taste "canned" to me. Found variety of ingredients and amounts pricey and possibly unnecessary since great results were achieved with substitutes - Pace Southwestern Chipotle with tomato sauce and extra paste as fillers instead of both salsa and picante. The rest I had. I did cut down on amount of garlic listed by half. Caution: Mr. Bill ain't kiddin' - this is hot and spicy so adjust accordingly! Lastly, I forgot to add the beer - ugh!! Will certainly make this again (WITH beer). Thanks, Mr. Bill! You have a flair for flavor!

Mochiko Chicken

THESE ARE FANTASTIC!!! I had never heard of Mochiko Chicken before. I've already made them twice in ten days and can't get enough. I'm not a meat-lover but these I can't resist. Family really liked these and gobbled them up. The chicken came out looking exactly like the photo, was easy and quick, using ingredients I mostly had on hand already; used EV coconut oil for one batch and combo veg. oil for the other. I never add salt when recipes call for soy sauce. Didn't have green onions, only dehydrated so I used those. I keep wanting to upload a photo but they literally don't last until the whole batch is fried! Thank you, thank you for this incredible recipe!

Pineapple Grilled Pork Chops

Amazed at how simple this was and the flavor was divine. Marinated over night and throughout the day; meat was melt-in-your-mouth. Next time, will double the pineapple since we love it grilled. This will become a regular on the menu. Thanks!!

Honey Baked Chicken II

This is a keeper! Only had 3 skinless, boneless chicken breasts so I cut into chunks. Based on reviews, I used less butter - 1/3 C - and kept all else the same. Covered to bake at 350 for 30 minutes, uncovered and basted for 10 min., broiled 5-7 min. Meat was slightly dry - next time will bake covered for 20 min instead of 30. THANK YOU for this!

Papa's Vinegar Chicken

This was SO wonderful! Unfortunately I cooked too long in vinegar mix so chicken wasn't as juicy as others report. We thought salty-tangy flavor was just right, but if you aren't used to salt in your cooking, I recommend maybe 1/8 cup salt instead of 1/4. WILL make again, cooking for no longer than 25 minutes in the vinegar next time!

Monte Cristo Sandwich - the Real One

Fresh Southern Peach Cobbler

Flavor is divine. I like more pie crust type cobblers, but this will definitely do! I found that the peach to dough ratio was just fine, added a tsp vanilla to peach mixture and added extra cornstarch as recommended. I'll do without extra cornstarch next time because I think the dense crust needs the extra juice. Thanks!

Chef John's Pavlova with Strawberries

Fantastic dessert! It's like nothing I've tasted before. Be sure to wait a full hour for this to cool - I got anxious and rushed this part; I think my Pavlova would have been a tad taller had I waited the full cooling time. The cream also ended up melting some and so berries weren't stable... Also, if you watch the video, beating the whites by hand is noble but unless you want to spend about 45 minutes doing it, use a mixer!!!!
