Zucchini Pie

Reviewed: Jun. 29, 2011
I tried following the recipe exactly, but did not have marjoram, so used italian seasoning and added a few cherry tomatoes quartered from the garden. My husband loved it, said it tasted so "fresh". I didn't care for the onions being on the raw side. But it had good flavor, next time I think I will sautee the onions a little before adding to pie. Diced zucchini which kept it semi firm after cooking it. We liked that the zucchini didn't turn to mush. Surprisingly the 1/2c veg oil did not make it oily or greasy. Will make again, thanks!!!!

Blueberry Sauce

Reviewed: Jun. 24, 2011
Very good flavor, it is very thick but the directions say to add water to thin down to desired consistency. I agree it is more of a pie filling, but we have enjoyed it on waffles and ice cream. Will try another recipe for more of a syrup consistency. Recommend to make ahead of time for flavors to meld together.

Zucchini Cornbread Casserole

Reviewed: Jun. 24, 2011
Good, but confused if you need to squeeze the moisture out of the zucchini before adding it. I did not, so it was a moist casserole and needed more cooking, but we still enjoyed it. 5star flavor, 4star on instructions.

Baked Potato Soup

Reviewed: Jan. 24, 2011
Yummy!!! I used a 5lb bag of potatoes and doubled everything. I cooked the potatoes first before adding to the soup and when I added the potatoes I put in 6 strips of bacon diced up. Didn't add any hot sauce, but needed to add a little more salt and cajun seasoning to our liking. Let everyone add their own cheese, bacon and sour cream. It was awesome!

Cheddar Bay Biscuits

Reviewed: Jan. 24, 2011
Excellent!!! I would suggest using milk instead of water and adding some garlic powder to the dry mix too. Not sure how much 3oz of cheese is but I used over a cup of cheese and we loved them.

Easiest Peanut Butter Fudge

Reviewed: Nov. 2, 2010
Very easy. used others ratio of 1, 2, 3. For those who had a hard time dissolving the sugar use powder sugar and not white sugar. Just follow the recipe and def use a mixer to mix. Next time I might try melting some chocolate on top. Very yummy!!!

Broccoli Chicken Braid

Reviewed: Oct. 14, 2010
Very good, liked the tang the mayo gave. Didn't use almonds and dill (I don't like dill). I used frozen brocoli and microwaved it for a few minutes before mixing it with the chicken. Will make again.

Old Fashioned Coconut Cream Pie

Reviewed: Jun. 21, 2010
Made this for Father's Day for my husband and he said I could I make this anytime. I used a graham cracker crust. I also used a can of cream of coconut and the rest whole milk to equal 3 cups. I forgot to toast the coconut but put it in the food processor and mixed the entire cup in the custard. I also used 1/3 cup of cornstarch instead of the flour and used an extra yolk. Once the pie had cooled off I made whip cream with a half pint of whipping cream and 2-3TBS of powder sugar and a 1tsp vanilla then topped it all off with toasted coconut. Very good, maybe a little too sweet for me. Next time I think I will look for the coconut in the freezer section that is not sweetened. Sorry for all the alterations, I just used the recipe as a guideline.

Orange Sour Cream Muffins

Reviewed: May 9, 2010
Surprised that no one has reviewed for over a year, so had to try. Not sure what the difference between a muffin and cupcake is, but this might be a cross between the two. My family really liked them, I was a little dissappointed. They did nott rise. Called for a lot of sugar, I cut it back to 3/4C not 1C. It was easy enough that my 6 year old helped and was so pleased that she got to help in the kitchen. But not sure we'll make again.

Waffles I

Reviewed: May 9, 2010
Very good. Just like the recipe in the Betty Crocker's Cookbook but vanilla has been added. I like the vanilla addition. Makes fluffy waffles. Usually make the Betty Crocker's waffles, but will now do this version with the vanilla. In our world, vanilla makes things better when it comes to waffles and pancakes. Thank you!!

Edible, just not to our liking. Seems healthy and cheap to make but we are more of a rice and gravy kind of family.

Not sure what happened, but these did not turn out very good. Very dense and flavor was off. My favorite brownies are still the ones on the back of the Tollhouse cocoa powder box. Sorry.

Beef Stroganoff III

Reviewed: May 3, 2010
Good. I made last night. I marinated the meat in cooking sherry for 2 hours before I cooked it. I used a sweet onion and then doubled the beef broth, flour and sour cream. Left out the wine since I marinaded the meat. Will make again.

Parmesan Chicken II

Reviewed: Apr. 25, 2010
Very good, by two girls liked it. Made with drumsticks and thighs. Some had skin and some were skinless. Next time will use all skinless chicken. Can use any cut of chicken. Baked in a pan with a wire rack to keep chicken out of its juices.

Maple Bacon Pancake

Reviewed: Apr. 25, 2010
Just made it this morning. Excellent. It has everything we love, pancake, bacon, cheese and syrup. YUM YUM!!! Made it exactly how written, but the cook time and temp is off. Cooked 375 for 15-20 min. Oh yeah and added some bacon to the mix and then put some on the top at the end with the cheese. Will be in our rotation of breakfast when we get tired of plain pancakes or waffles. Probably will try with sausage next time.
