Onion Pasta

Try this with half the olive oil, half the butter, half the onions. Add some fresh chopped garlic, 1/2 c. white wine, 1/2 cup chicken broth. Add cooked pasta to pan, toss with fresh grated parmesan, 1/4 cup fresh chopped basil and fresh ground pepper....

Baked Omelet Squares

I made a versoin of this last week with breakfast sausage, spinach, mushrooms and onions. (That's what I had in my fridge.) I think you could use any ingredients you like. Such an easy, fun casserole. I am making one tomorrow with the listed ingredients but using andouille sausage instead of ham. Thanks for the great recipe !!

Very good, easy soup. I sauteed some onions and garlic first and added broth and rest of ingredients to pot. It would be great w/some chopped fresh cilantro. Didn't have this time, will next time.

Kickin' Collard Greens

Very good collards, I have been cooking them like this for years. I go one step further and add about a 1/2 t. of sugar and 1 to 2 T. balsamic vinager half way thru simmering.. Great taste !!

Linguine with Asparagus, Bacon, and Arugula

Yum !!! Used half of the bacon grease and half chicken broth,and about 1 tablespoon olive oil. 2 chopped and seeded roma tomatos. Did not have asparagus but used fresh mushrooms and extra garlic... added crushed red pepper.Tossed with whole wheat pasta. I sauteed a chicken beast and sliced to serve on top. German Apple Cake I

This cake was good and moist. I did make a few changes. Instead of apples, I had some peaches that were very ripe. I used 1/2 c. oil and 1/2 cup unsweetened applesauce. I only used 1 cup brown sugar. 1 cup all purpose flour and 1 cup whole wheat flour. It was plenty sweet. I served it with vanilla ice cream and fresh blueberries.

Ginger Glazed Mahi Mahi

I just made this for dinner. I see why other reviews said people enjoyed this fish even though they don't like fish, the flavor of the marinade overpowers the fish! The glaze is great though. I would skip the step of marinating the fish maybe broil or grill the fish with a little olive oil and put the simmered down glaze over the cooked fish. I would have to give the glaze a 4 star rating.

Cuban Smoked Sausage with Chickpeas

I made this last night. what a great easy dinner. I did not have tomato sauce so I used a can of chopped tomatoes. I simmered it for an hour. The smell was great ! At the end I added some chopped fresh cilantro. I served it over brown rice. Very good.

Cinnamon Bread I

This bread is so good ! After reading the other reviews, I doubled the topping,using only brown sugar and put some in the middle. My family loved this for breakfast Sunday morning. Very moist !! I will make this often.

Szechwan Shrimp

This is my new favorite recipe. I always add some kind of veggie. Carrots, pea pods, peas, sugar snap peas ect...I too double the sauce recipe. I recommend adding the shrimp raw. They only take 2 minutes and they add so much flavor to the sauce.

Spaghetti Squash I

Great side dish ! I followed the recipe as close as I could. Did not have fresh tomatoes, I used a can of diced tomatoes w/herbs(dained) and only used half of onion. 2 cloves of pressed garlic. I did not have fresh basil. I will make sure I have it next time. Lot's of flavor, my 11 year old had 2nd helpings ! I will make this often.

Broiled Grouper Parmesan

Great, easy recipe. I followed the recipe except instead of salt and pepper, I added about 1/4 t. of lemon pepper and some garlic powder to the butter mixture. Also I used 4 to 5 dashes of hot sauce. (cholula is my favorite.) This would be great on boneless chicken breasts and shrimp too.

Grecian Pork Tenderloin

I used lemon juice instead of lime. I did cut the serving size down to two and it was plenty of maranade or two tenderloins. I did use the amount of garlic in the six serving version. ( I love garlic.) I used my garlic press instead of slicing. Great recipe !!!
