Foil-Baked Chicken

I was so disappointed by this recipe!! Reviews were great and the ingrediants are all very flavorful, but this dish was somehow lacking in flavor! I cut the cornstarch in half as other reviews stated and it was still quite gloppy. Tender? yes, but so what when it's gloppy with no flavor. very disappointed and not a keeper.

Chicken Piccata

I tried a chicken piccata recipe from some magazine that was suppose to be from some gourmet chef and it was aweful and nearly imposssible to eat. Then I found this nice little recipe that is perfect! I used white wine and added 2 TSP of capers for the perfect balanced recipe. I definately reccommend fresh lemon juice. It was still a little lemony for my kids, but I will just serve there's plain next time. My hubby and I really liked this!

Cottage Cheese Chicken Enchiladas

Okay, I made this exactly as stated and I have to say I was very DISAPPOINTED! The reviews were all very good, but this dish was just okay. I have a similar recipe(no cottage cheese) that takes just as much prep and is so much better than this one!!!! I'll stick with that one.

Virginia Apple Pudding

I just made this recipe and I quite like it! I made it exactly as called for in the recipe (wait, no...I added a tsp of vanilla to the batter). It is easy and very yummy and I haven't even added ice cream yet. The only thing I'd change really is the amount of apples. I think next time I'll increase it to 3 cups. Also, I used an 8 x 8 square casserole dish and that was the perfect size. Try this recipe and enjoy!

Nana's Barbeque Sauce

Very good, but after settling it becomes a bit too sweet. I think I cut back the sugar required, but I can't remember now. I just remember thinking that this one was worth keeping!

Reuben Casserole

Really, I should have just made reuben sandwiches. There was nothing great about this recipe and I was terribly disappointed. Do yourself a favor and just make sandwiches!!!

Buttermilk Baked Chicken

I have made this recipe twice, since I messed up making the first batch. The second time I made it just as written and I was less than impressed. Too much work for a so, so dish. I will be deleting this one from my recipe box.

Baked Chicken with Peaches

I love the simplicity of this recipe! I is wonderful to make in a pinch and my kids love it. Definately a keeper for me. I use canned peaches (good fresh ones are hard to find) and wouldn't change a thing about this recipe.

Zucchini Patties

I was trying to find a recipe that was similar to zucchini patties I'd had in LA. This was very close, but a bit too much batter for me. They were good, but next time I think I'll use less batter so the zucchini stands out more. I served it with sour cream and my husband loved them. Even my 4 and 5 year olds ate them.

Italian Spaghetti Sauce with Meatballs

I'm giving this 4 stars only because I haven't made the sauce, but the meatballs were simple and delicious. I was skeptical about not precooking them, but really it was perfect. I just used jarred sauce and simmered for the time that was called for in the recipe. My husband (a bit of a meatball addict and former restaurant cook) loved these!!!

Awesome Honey Pecan Pork Chops

Okay, I wouln't have picked this recipe, but my husband found it on his spinner for the iphone and sent it to me. I must say, DELICIOUS!!! Easy, is an understatement and just wonderful. A recipe that you don't even have to look up once you've made it. I have also used chpped walnuts and it was every bit as wonderful!!!

Peach Cobbler III

I have tried at least 3 different cobbler recipes and I think I've found it with this one. I used canned peaches and cut the water to 1 cup as suggested and it was perfect. I wouldn't change anything else. Super easy, too. Try this one!

Spiral Pasta Salad

I used this basic recipe to make pasta salad for 80 teachers at my son's school and it was a major hit. Yes, I altered it, but most importantly this recipe is all about the dressing. I used a blender to mix the dressing and added some roasted red pepers and a splash of balsamic, but it was great before I added anything. Use this dressing as a base and play with the rest of the recipe to suite your tastes. Definitely a keeper!

Indian Tomato Chicken

Very authentic, but decrease salt to 1/2 tsp! I didn't add anything to this to make it spicy, but I can see where that would be great for those that like some kick. My 4 year old son liked the chicken and my husband who eats a lot of Indian food really liked it as well. I served it with saffron yellow rice and peas, yum. I will add this to my Indian recipes for sure.

Chicken Marsala

I love this recipe! Quick and easy! I have made it 3 times, each time I cut olive oil and butter in half, replaced the sherry with more marsala and added a full 8 oz container of mushrooms. Delicious! I'd like to make it with the sherry, just haven't had it on hand. Served with pasta and both the kids and hubby loved it!

Bacon Wrapped Barbeque Shrimp

I used to make this on skewers for the grill and hadn't thought to do it in the oven! It is absolutely necessary to precook the bacon in the microwave for 1-2 minutes if you want crispy bacon. The rack and aluminum foil is perfect and necessary for a firm, juicy and crispy outcome. I just love this recipe! Quick and easy, great for grill, too!
