Curried Butternut Squash and Pear Soup

Reviewed: Aug. 21, 2010
This is a very wonderful warming recipe, and it will become a staple in this house! Be aware that curry powder can vary very differently, and that yours might be spicier than other reviewers! I took the advice of doubling the spices and wished I hadn't, the process of cooking the spices in the oil "blooms" them and would have brought more than enough flavor to the dish without the overpowering spiciness that I ended up with. I did not add the half and half for health reasons, and it was delicious without it. I added the juice (not syrup) from the can of pears that I had to use instead, and I think that it would have been better with a can of vegetable broth like another reviewer suggested, as it ended up being slightly too sweet. I tasted the soup before adding it though, and the flavor was just wonderfully balanced!

Coronation Chicken

Reviewed: May 6, 2010
This is not traditional coronation chicken. It is a nice enough chicken salad, but definitely not the original recipe created by Constance Spry for the Queen herself! I would omit the cashews.

Bubba's Jambalaya

Reviewed: Nov. 6, 2009
This was excellent! My husband spent a few years of his life in the south and said that it was just what he was looking for. The balance of taste was just perfect, and I could adapt the recipe to suit what ingredients I did and did not have on hand as needed.

Big Soft Ginger Cookies

Reviewed: Nov. 6, 2009
These are a good basic cookie, and they stay soft, however they taste more of cloves than of ginger. I did use the other reviewers suggestions to reduce the sugar and not roll it in sugar (definitely needed! I used 3/4 cup and would reduce it further if I was going to frost these) and to use orange juice instead of water. My spices are new, and yet with all that it still came out horribly bland. Will not be making again without some major adjustments.

Blue Ribbon White Bread

Reviewed: Oct. 29, 2009
This was far too sweet and flimsy to be considered a good versatile bread in my opinion. It did not hold together very well, and crumbled quickly. If you have a very sweet tooth and don't mind it falling apart this could be what you are looking for. If you are looking for a savory white loaf, this is not it. Two stars are for being true to it's "tender and creamy" claim.

Flavorful Flounder

Reviewed: Oct. 29, 2009
This has become a favorite in our house! You can change it up a little with a small amount of garlic or use other onions if spring onions are not available and it always comes out great.

Spicy Shrimp Skewers

Reviewed: Oct. 29, 2009
I could not find any jerk seasoning, so I also substituted Cajun seasoning. Personally, I really liked this, a very good balance of flavors. My husband however did not like this, as he thought that the flavors masked the flavor of the shrimp too much. (He does tend to like things pretty plain though!)

Fluffy White Frosting

Reviewed: Oct. 29, 2009
While I would say that the name is misleading, and that this came out more like a very light fluffy marshmallow consistency than a frosting, this is a very good recipe. You have to be sure to work quickly with it before it sets, but it had just the shine I was looking for, and held it's shape exceptionally well. It also ages rather well, still had the shape I made it in and tasted great a few days later. One word of advice; leave it plain or eat it quickly if you add any decorations on the top, as while it does not crystallize on it's own, it did around the chocolate chips I used on it.
