Pretzel Turtles

These were amazing. I made these when the family was together for brunch. The Dove Caramels that some had previously recommended was difficult to find so I used Rolos. I made some with the mini pretzels and others with the waffle style (square) pretzels. The waffle style pretzels won as the favourite. Everyone really enjoyed these but said that they would definately rate them much higher if the pretzels were unsalted. Once cooled down, putting the cookie sheet directly into the fridge freezer for a few minutes is a good idea since the chocolate takes a long time to harden again and gets messy on your hands. These store very well at room temperature.

Graham Streusel Coffee Cake

There wasn't a single person that didn't love this. It was a "huge" success. I brought it to the office and the compliments were huge. My family was very upset that I took it to share with my colleagues, because it meant that they didn't have as much for themselves. I used pecans instead of walnuts and it worked very well. I was sure the 9" x 13" pan was the wrong size (too large) because the batter spread very thin and barely covered - but once baked, there was a lot more height and I was happy I didn't change the size pan used. Next time, I will definately try this without the icing as the only negative was that the cake was "very very" sweet (it didn't stop anyone from gobbling it up). The recipe says "best if served warm," but none of us agreed. We enjoyed it even more the 2nd day .............. the only reason there was a 2nd day is that I made this late at night on day 1.

Best Bread Machine Bread

Awesome! After reading a lot of reviews, I made a few adjustments. I used honey instead of sugar, 1 cup whole wheat flour with 2 cups all purpose instead of 3 cups bread flour, and I increased the salt to 1 1/8 tsp. Delicious!!! One more thing - someone said not to use Canola oil. I used Canola in my recipe. I have no complaints and will use it again.

Shrimp Fettuccine Alfredo

Absolutely delicious and super easy!!! Hints from other reviewers were a great help. A lot of my hints below are from other reviewers that were a great help. My 22 year old son, came in and said he wouldn't be eating supper with us. He took one taste and said that he decided to stay and ate a huge plate. He and my son were grabbing at whatever was left. I know this recipe says it feeds 6, but 3 of us polished it off. Will absolutely be making this again ! The changes I made and would make again next time are .......... 1. Instead of 1 pound pasta, I chose one of the 300 gram packages from Catelli Healthy Harvest. This amount of pasta was perfect 2. Instead of 1 cup half and half I used between 1/2 and 3/4 cup of homogenized milk and the balance with half and half. I'll keep cutting the fat bit by bit each time I make this (example: part 2% and part homogenized) 3. After saute of shrimp, I removed from the pan and then made the sauce. I put back the shrimp near the end. 4. Instead of 6 tablespoons, I used approx 1/2 cup. I used low fat parmesan. Fresh parmesan is of course the best but I chose this option only because I'm trying to watch my fat intake 5. I used dried parsley flakes and it was good 6. I added a little bit of ground black pepper 7. I didn't have the patience to wait until this thickened, so I added about 1-2 tablespoons of cornstarch to help.

Passover Chocolate Mandelbrot

These were amazing ! I followed other reviewers suggestions. I made these into 3 loaves instead of 2. I baked for 35 minutes and then sliced them and turned them on their side. Turned the temperature down to 250 and after sprinkling with more cinnamon/sugar, I dried them out for 15 minutes and then turned them over. Sprinkled with more cinnamon sugar and another 15 minutes. These were so delicious. The next time I make them, I'm going to try the 3 loaves 3 different ways. One loaf with the chocolate chips & cinnamon/sugar like the recipe calls for, the 2nd loaf with the chocolate chips but no cinnamon/sugar. The 3rd loaf, without the chocolate chips but only the cinnamon/sugar. I'm especially looking forward to just the cinnamon/sugar alone. Thank you Joyce for this amazing 5+ star recipe.

Slow Cooker Cranberry Roast

Everyone loves this. Also good with chunks of potatoe and onions put on the bottom first before other ingredient. I've also tried this by using only about 2/3 the onion soup mix on the bottom of the roast and reserving the last 1/3 to mix with the cranberry jelly.

Portobello Mushroom Burgers

Fantastic ! I was using pureed garlic from a jar - therefore I used 1 1/2 teaspoons. Otherwise, I followed the recipe exactly as shown and it was great ! The provolone has a great flavour. I ate one mushroom cap as a "burger" and then had another small one just plain. Yummy !

Mini Apricot Cheesecakes

Chocolate Version: Change the vanilla wafer cookie to a chocolate chip cookie for the crust and instead of preserves, try chocolate whipped cream (put the whipped cream only when ready to serve because it doesn't hold it's shape for too long). Then sprinkle with a pinch of chocolate sprinkles. Yummy !

Baked Haddock

Delicious. Instead of melted butter, I used the "spray" butter. I also used flavoured bread crumbs and that might be the reason that I found this recipe to be salty (sodium content in the bread crumbs was 14%). I will definately cut back the salt next time. Lastly, if you choose to put the fish on a wire rack in the oven (to avoid the soggy bottom that others speak of), then don't forget to grease the rack so that it doesn't stick. With these adjustments, definately would be five star recipe. I'll be making this again.

Quick Chicken Marsala

Really fast and easy ! 1) Definately extra mushrooms are a must. 2) Found this to be a little on the salty side so the 2nd time making it, I used unsalted butter and it helped. 3) The 2nd time I made this, I added cornstarch to thicken the sauce

Grilled Zucchini II

A nice change as a side dish/vegetable and really really good. My only suggestion is to cut the zucchini by length instead of width. This makes handling them on the BBQ much easier.

Easy OREO Truffles

I put the oreo cookies in my food processor and then added the softened cream cheese. Food processor made this super easy. Had to put batter in the fridge to allow for easier rolling. Added a touch of margarine to chocolate to allow for it to be smoother and thinner for dipping however, the dipping was the only part of this recipe that was a bother to do. Overall, whoever tasted these either "loved" them or found them way too sweet.

Cheddar Spirals

Very good but oh my - so fattening ! I cut where I could by using skim milk for at least half and then homogenized for the balance. I'm tempted to use skim milk only the next time - yes next time because everyone loved this ! I used a 300 g pkg of low fat sharp cheddar and 300 g pkg of mild reg cheddar for the balance. I also tried to cut back the butter to about half. Even with all these adjustments, as many other reviewers had previously noted, it still showed a lot of oil when reheating the next day. I added some dry mustard & worcestshire sauce that other suggested but not so sure about doing this next time - I'm the only one in my family that felt this way though. I think that this is a no fail recipe as you can make many adjustments to your own family and their tastes.

Passover Sweet Kugel

This was okay but not as amazing as I ad hoped. I eliminated the nuts (children and allergies), and I changed it to 375 degrees for 35-40 minutes like my other kugels and it baked perfectly.

Chocolate Truffle Cookies

I love anything chocolate, but was not impressed by these. They were unpleasant and messy to shape. They do not take a nice form when baking and I was very disappointed with the texture and taste of the final product. My husband likes everything I bake and I have a great deal of experience, but he did not like these at all. Very disappointing and will not make again.
