Creamy Au Gratin Potatoes

I have made this recipe two times as written with good results. The potatoes really absorb the cheese sauce, so your potatoes may come out drier than you want. When I make this recipe again, I will double the cheese sauce as other reviewers have suggested and see if that helps.

Pumpkin Pancakes

I made the recipe as written. The pumpkin flavor was subtle, but the pancakes were hearty and very filling. I froze half of the cooked pancakes and upon reheating, found the pumpkin flavor to be more pronounced. I plan to make these pancakes again.

Classic Hash Browns

This was a very easy and tasty recipe. I let the potatoes cook longer than the recipe states, as I like crispy hashbrowns. I no longer need to buy frozen hash browns from the grocery store.

Black Beans and Rice

I followed the recipe, except using dried beans instead of canned and brown rice instead of white. Very bland dry. I added fresh tomatoes to make it more moist. I put the leftovers in a soft tortilla shell with shredded cheese for quesidillas. Much better to eat that way.

Black Bean Vegetable Soup

I followed the recipe, except for reducing the vegetable broth to 2 cups, as I wanted a thicker soup. I thought the soup was bland. I added an extra teaspoon of cumin, but didn't think it improved the flavor. I will keep searching for a black bean soup recipe.

Insanely Easy Vegetarian Chili

This is a tasty chili recipe. I used crushed tomatoes and only one cup of bell pepper. It was a little bland for me, so I added another tablespoon of chili powder. After that addition, I thought it tasted perfect. I bought frozen corn for the chili, but forgot to add it! I plan to make this chili again.

Beef Tips and Noodles

I have made this recipe several times. It is an easy meal that is great for busy weeknights. I use fresh mushrooms and instead of water, I add a full can of milk from the empty cream of mushroom container. The only negative, like some other reviewers have mentioned, is that the meal is a bit salty.

Quick and Easy Chicken Noodle Soup

My husband and I LOVE this recipe! I follow the recipe almost exactly as written, EXCEPT I add two to three chopped garlic cloves. I also DO NOT add salt, as I feel the soup is salty enough from the five cans of broth. I sometimes add pepper, but not each time. I have made this soup several times. This recipe is a keeper!

Spaghetti Sauce with Ground Beef

I made this sauce without ground beef. The sauce was bland. I added more pepper, oregano, and basil. I also added a teaspoon of sugar to help with the acidity of the tomatoes. After my changes, the sauce tasted a little better. I will continue my search of a homemade pasta sauce though.

Marinated Grilled Shrimp

I made this recipe for New Year's Eve. Since there were only two of us, I halved the recipe. I used frozen shrimp, instead of fresh shrimp. I substituted the basil for oregano and the cayenne pepper with red pepper. After I placed the shrimp on skewers, I cooked them on a George Foreman grill. The recipe was good, but not something I will probably make again. I will keep looking for other shrimp recipes.

Cha Cha's White Chicken Chili

I LOVE this chili. I have made this recipe several times and finally found the perfect combination for my tastes. To begin, I cook and shred about a pound of chicken breast. I dice 1 medium onion and cook it along with 6 cloves of garlic. I omit the jalapeno peppers. I add two cans of green chilies. I use 2 tsp. of ground cumin, 2 tsp. of oregano, and 1/4 tsp. of ground red pepper (do not have cayenne pepper). I use 2 cans of chicken broth. I use 4 cans of white beans (puree 3 of the cans in the blender). I do not add the cheese to the mixture, but rather let everyone add what they would like on their own. It is excellent with crushed tortilla chips and sour cream on top as well!! This recipe is a KEEPER!!

Downeast Maine Pumpkin Bread

I made this FANTASTIC recipe during Christmas. I reduced the amount of sugar (used 2.5 cups) than what the recipe called for. It turned out great, although a little sweet. Next time, I plan to reduce the amount of sugar to 2 cups. I will make this bread again!

BBQ Pork for Sandwiches

I know a 1 star rating is not the typical reaction to this recipe, however, I did not like it. My boyfriend LOVED this meal and if he was rating this recipe, he would give it 5 stars. We doubled the recipe, so we used 6 lbs. of boneless western style pork ribs , 2 cans of beef broth, and a mixture of 3 different bbq sauces (Sweet Baby Ray: Honey, Open Pit: Original, and Kraft: Thick N' Spicy). We took the meat out of the slow cooker after 4 hours, shredded it, added the mixture of bbq sauces, and put it in the oven for 30 minutes. I think the problem is I am not a huge fan of things cooked with beef broth. It makes food tastes funny to me. The meat was also fatty, which was not appealing. I could only eat half of the sandwich. I won't be making this again.

Spicy Shrimp Creole

For starters, I halved the recipe. I added a green pepper, as well as 3 cloves of garlic instead of 2. I used red pepper instead of cayenne pepper because that was what I had on hand. I did not have hot sauce on hand, so I omitted that ingredient. I also used frozen shrimp instead of fresh. I put the meal in a dish and stuck it in the fridge overnight so the flavors could blend together. I reheated the creole the next night for dinner. I was so happy I omitted the hot sauce because it was almost too spicy for my taste! Next time, I will only put in 1/8 tsp red pepper. I served the creole with a Dole Light Caesar Salad Kit and french bread.
