Luscious Lemon Cake

Might as well had made just the box cake, nothing special. The glaze just made the top part chewy, not moist.

Uglies

College son LOVES these, easy for him to make. I prefer using leftover taco meat (brown beef, add half a jar salsa and simmer til liquid absorbed) Don't use Grands, smaller biscuits are better, dont grate cheese,too messy, just lay a chunk on top,serve with sour cream.YUM!

Leftover Meatloaf Tater Tot Casserole

Hey, that was surprisingly good! I halved the recipe and it was the perfect size for the 4 of us. I didnt use the cream of chicken or onion as I had niether. Cut the meatloaf 3/4 inch thick for substance, used the whole 12oz package of seasoned asian vegatables (thus eliminated most of the season salt) as their arent near enough veggies in this dish,Cooked as directed.YUM.

Caramel Apple Pork Chops

Pretty tastey, Made as directed, but doubled sauce not apples. Chops were seasoned with Seasonal and pepper, tad bland, will work on that next time. Will make again, fast and easy!

Gourmet Sweet Potato Classic

Used 4 sweet potatoes and 1 huge yam for color. Put no sugar in base,1/2t salt, used skim milk. Topping as directed. Mom can't have nuts, so I topped one corner with a crunched up Granola bar...mmmm. Pretty darned good. I hate SWEET sweet potatoes, this was much better.

Parmesan Broccoli Bake

Broccoli never got tender and it was fairly bland. I would HIGHLY reccommend cooking the broccoli to almost tender first, better yet, blanch some fresh broccoli and it would be a great improvement. Don't think I will try again as there are tastier versions out there

Pineapple Upside-Down Cake II

Followed recipe exactly, pretty tastey! I would prefer more of a carmelly top, the brown sugar/butter just absorbed into the cake. Next time will try with peaches or blueberries. Really liked the cake flavor, must be the cinnamon!

Lemon Curd Bars

Didn't knock my socks off. The crust was WAY to buttery, even left a film of butter in the bottom of the pan. I didn't use baking soda as recommended. I found it too sweet as well. My husband LOVED it, however. I felt a heart attack coming on when just looking at the pan, very unusual for me!

Taco Pie

Let me start with, my teenage son said "Finally! A decent dinner!" I added a can of black beans to the meat to make it more substantial and mixed in 1/2 a jar of chunky salsa, only used half of the sour cream than what was called for and a fraction of the chips (fat!fat!fat!) just enough for the crunchy texture. Turned out fab!
