Easier Chicken Marsala

Took others' advice; added 1 1/4 c marsala, some turkey broth (out of chicken broth!) and let it simmer covered for 20 min, uncovered for 10. Will add even more marsala and broth next time-we like a LOT of gravy! Tastes AWESOME, will be making again and again!!

Almost No Fat Banana Bread

Delicious!! My husband even liked it (of course I didn't tell him it's HEALTHY haha) I made a few small changes due to the reviews of others-a little salt and nutmeg, 1/2 cup of sugar, 1/3 cup of applesauce, mixing the wet and dry ingredients separately first...turned out great!! A little "rubbery" perhaps, as others say, but it still tastes great!!

Gina's Lemon Pepper Chicken

DELISH!! Seared the chicken in a little white wine and chicken broth first, then baked them for about 40 minutes with lemon pepper, onion salt and garlic powder, as well as a little more wine and broth.

Guacamole

I made this with my mother in law and we DEVOURED it!!! It was definitely a hit, and is now my #1 guac recipe!! I also left out the onions, not being a big fan, but the taste was AMAZING and the cilantro and lime really make the taste!!

Tara's Sweet and Chunky Chicken Salad

Oh dear was this EASY and YUMMY!!! I only made a few alterations-due to what was in the house, and/or a TAD healthier. Boiled 1 chicken breast for 1 hour (easy and keeps it nice and moist) Used Miracle Whip light, sliced almonds, sweet relish, and omitted onions (don't like 'em much) Kept everything else the same! I'm eating it wrapped in lettuce as I type...YUMMY, THANKS TARA!!!!!

Cowboy Skillet Casserole

Delicious...I added a 1/2 can of corn to the cornbread and left out the peppers and onions (none in the house) and used Bush's Baked Beans with Maple Cured Bacon-YUM!!!!!! My husband and I felt that you definitely can't leave the veggies out of the meat mix, or it lacks that "something". Also, will try to make a little gravy for it next time. Overall, it was delicious, easy, and a keeper!!!!

BREAKSTONE'S Creamy Layered Enchilada Bake

I did like others said and put enchilada sauce on the bottom of the casserole dish...and threw the rest in with the the layers. Won't mix it with the layers next time-made it so that the layers won't stick together-but the taste was AWESOME!! Very easy to make! My husband loved it and I will be making this again!!

Lemon Butter Chicken

YUM YUM YUM!!!! I used light dressing and I Can't Believe It's Not Butter Light and it was still AMAZING!! My twig of a husband who eats like a bird was just raving about it and ate a whole 7 oz breast!! Definitely making this again!!

Pepperoni Stromboli

DELICIOUS!! Stomboli is my husband's favorite so I made this with my grandparents for a test run...want to make it for his birthday!(He's a Jersey Boy, so it's gotta be GOOD!!) We made our own dough and left it in the bread maker too long, so it was hard to stretch it! Nor could we braid it, so our stromboli looked like a gigantic calzone! Also, 20x8 IS HUGE!! We could only stretch our dough to 15x7 and had to call more family over to help us eat it! Like others, we spread garlic butter over the top before baking and used the new Kraft Parmesan/Asiago/Romano grated cheese on top of that...SOOO GOOD!!! My aunt was picking the grated cheese crumbs off the plate-it's very yummy toasted! The only change I recommend besides making it smaller, is adding a lot more pepperoni and more cheese :) Will definitely be making this for my husband's birthday!!

Sloppy Joes II

VERY tasty, I did the same as a few others and only did 1/2 cup of ketchup and the other 1/4 cup bbq sauce. YUMMY!!! Be advised, however, keep a close eye while it simmers...the full 30 min for me burned it :( Still edible but yeah...I should've just taken it off as soon as the sauces mixed and warmed a bit..about 5 min. Will make again though!!

Whiskey Chicken

WOW!!!!!!! This is a million times better than any restaurant could make!!! I followed the recipe almost exactly, except: -replaced pineapple juice with syrup from canned pears (no pineapple juice handy) -sauteed chicken in chicken broth to keep some moisture in -added a tiny bit of crushed red pepper THE BEST!!!!!!

Baked Honey Mustard Chicken

Delicious!!! I was unsure if my husband would like this but he loved it! I only had French's classic mustard so I used that but added a few more squirts of honey to balance out the sharp taste. Otherwise I followed the directions exactly and covered it with foil to lock in the moisture. Will definitely be making again!!

Ranch Potatoes

Delicious! I used low fat cream cheese and skim milk to lower the calories, but still tasted great! The only thing I will change is buying a different ranch mix next time, the generic one I bought gave too much of an onion flavor. Will definitely make again!!!

Albino Pasta

Like others, I added in red pepper flakes (good way to use up all those little Domino's packs in the junk drawer!) and garlic salt. I also used a tbsp of minced garlic rather than a tsp. Oregano and basil were thrown in, as well as fresh broccoli and a leftover lemon garlic roasted chicken breast. Delicious!
