Tex-Mex Beef and Cheese Enchiladas

I used this as a base recipe. I used flour tortillas (more common in Canada than corn) and filled them with beef and cheese, instead of putting the beef in the sauce. I used my own favourite seasonings, and put some taco sauce in with the tomato sauce (medium or mild depending on what is available and who is eating it). I really love these, and everyone I have made them for loves them too! I am sure the original recipe is fantastic, I just wanted to try them the way I made them.

Foil Potatoes

Doesn't get much easier than this. For people who love potatoes and simplicity (rather than lots of seasonings and extras) this is a great recipe. The only thing you need to make sure about is to place the potatoes in a baking dish or on top of a baking sheet that isn't too shallow because the butter will melt and get all over the place - smoke alarm went off the first time I made these! But I like making these when I don't want too much prep work.

Slow Cooker Pork Chops II

I was really excited to make this recipe, always looking for ways to make pork chops, but it was disappointingly bland, almost no flavour, and I am okay eating bland foods in general. The ingredients seemed perfect to make flavourful pork but I think pork is just meant to be bland. It smelled terrific though! I think I will just stick to breading my pork chops and baking them, it gives it slightly more flavour, and maybe the crispier texture makes it seem less bland. I really really want to like this recipe though!!
