Oriental Cold Noodle Salad
I can't believe how delicious this was! We made it for an easy dinner last night and ate the entire bowl. . .whoops. Serve with cold sake. If you would sprinkle this with toasted sesame seeds that would make a nice touch. I didn't have peanuts so I used chopped raw cashews from trader joe's and threw in a little sea salt to make up for the salted peanuts. The dressing was delicious and I agree with the reviewers who said this deserves 5 stars on the dressing alone, which I will be trying in other foods. Let's see, I substituted olive oil for sesame oil but I know sesame oil would be delicious. One minor change is I used a bit more oil, more like 2 tbsp., because I have very sticky soba noodles and they need more to unstick them.

Green Tomato Pasta Toss
Thoughts: this is a fast, easy, and surprisingly sophisticated recipe to make on short notice in the summer. I used rotini which is just what I had around. I also ground quite a bit of pepper, to my taste. The kids gobbled it up and I didn't bother with garlic, chicken broth, etc. I like all of those flavors but this recipe seems to work well if you keep it simple. So that is my tip--don't over think it, and let the tomatoes and cheese take center stage.

Kentucky Tomato Soup
What a flavorful soup! Also fast and easy to make. I pureed it in our VitaMix all in one batch, no problems. We used freshly picked garden tomatoes and flat-leaf parsley from my herb garden. The coffee gave it a smokey flavor. My husband actually asked, "did you smoke these tomatoes first or something?"! The only thing I substituted was canned condensed milk for the heavy cream. The heavy cream probably would have been a more delicate flavor, but I learned the condensed milk trick last year, it's cheaper, I always have it around the house, and then the rest of the cream doesn't go bad because I rarely use it, plus it's lower in fat for my family and for recipes like this where it's just a little bit, it doesn't make a huge difference.
