Dee's Dark Chocolate Granola

Way, way too sweet as written, and I have quiet a sweet tooth. All I tasted was sugar. Other than that, it had a nice consistency and was really easy to make.

Sweet Dinner Rolls

I was BLOWN AWAY by how easy and delicious this recipe is! They were pillowy soft, deliciously chewy, a nice, neutral flavor, and didn't require me to knead that much at all. I made these without a bread machine following the instructions of the top comment, and like her I made clover rolls instead of crescents. I softened the butter in a rush by putting it on the defrost setting in the microwave for 20 seconds. 10 minutes in an oven at 375 degrees was perfect.

Homemade Noodles

It's great that so many people could make the recipe work with more liquid, but the recipe AS WRITTEN is way too dry - it produces a crumbly mess! I had to add another egg while the dough was already half formed, and it was difficult but not impossible to incorporate it. Two tbsp of liquid (milk or water) would probably do it as well. With the addition(s) it makes a chewy, delicious noodle, but the recipe posted here does not work. :(

Curry Stand Chicken Tikka Masala Sauce

Delicious!! For those of us that like the heat mild, I like to halve the cayenne pepper - it gives a little kick, but it won't leave your mouth burning. I always substitute unsalted butter for ghee with no problems. Also, I've tried making this with heavy cream as stated, half-and-half, and whole milk (the only thing I had at the time!) and I absolutely recommend using HEAVY CREAM unless you have no other choice. The creaminess of the heavy cream seems to mellow out the acidity from the tomato sauce and the heat from the cayenne, and the result is a superior curry compared to the half-and-half and milk versions. Thank you for an amazing recipe!

Delicious Ham and Potato Soup

Delicious and really easy! I've tried two other ham and potato soup recipes on this site, and this one is definitely the best. I did make a little extra roux - you can increase it as long as the butter and flour are at 1:1 ratios - and it was sooo thick and creamy. I also excluded the celery because I dislike it. I might add diced carrots next time for extra color and flavor.

Easy Oatmeal Muffins

So easy and delicious! I wanted a simple oatmeal muffin that I could grab and go out the door, and this is absolutely perfect. Just slightly sweet, so moist, and the ingredients are all on hand. I made it exactly as stated the first time, but I will definitely experiment with throwing in raisins, chocolate chips, or chopped fruit in the future. I actually like how bland it is since I don't have an appetite normally in the morning. Be sure not to overmix! Never beat the batter, just gently stir with a spoon or fork.

Strawberry Banana Smoothie

My mom has osteoporosis, so I tried this recipe to see if she'd like it since it has so much yogurt in it. I don't know how to explain it...it tasted...really off. I think there was too much yogurt and it threw off the taste. I used Dannon light and fit vanilla yogurt, great frozen strawberries (it's strawberry season here), and nice, ripe bananas. :( It just tasted bad. We prefer the Strawberry Oatmeal breakfast smoothie instead - MUCH tastier and the oatmeal gives it a really good texture.

Fried Rice Restaurant Style

Amazingly tasteless. I added more soy sauce as it is marked "to taste", then it just tasted like rice soaked in soy sauce. Would never make again. For those new to making fried rice, the rice should be made the day before and refridgerated to avoid mush. When my mom makes it, she usually seasons the eggs as well.

Fluffy Pancakes

DELICIOUS recipe! I always use vinegar as written, and I can never taste it. I'm sure lemon juice or just plain buttermilk would be fine to use as well. The first time I made these they turned out with a cornbread texture, which I didn't like at all, but my mistake was cooking them on heat that was TOO LOW. It just evaporates all the moisture out of them over time. Don't be afraid to use medium heat - just peek at them every now and then, and you'll get beautiful, moist, fluffy pancakes every time. Thank you for a great recipe!

Baked Mac and Cheese for One

This is, quite honestly, the best macaroni and cheese that I have ever made. I actually burned my tongue trying to salvage every last particle of the delicious sauce from the pan (worth it). I doubled the sauce and tripled the macaroni for my baking dish, and I added bacon bits to the top crust, which made it just that much more amazing (as bacon often does). Amazing as written! I recommend using a shallow baking dish just so the macaroni to crunchy, delicious top ratio is better.

Biscotti

Delicious and so, so easy to make. I've made this so many times over the years that I've memorized the recipe. Like other people, I use 1/2 tbsp vanilla extract and 1/2 tbsp almond extract instead of anise. If I'm making it for my mother, I decrease the sugar to about 3/4 cup for less sweet cookie. I always slice the large roll right out of the oven so it doesn't get all crumbly after it cools. I also find that melting some quality dark chocolate, pouring it into a shallow dish, dipping the smooth round side of the biscotti in it, then sprinkling sliced almonds on top makes for an amazing presentation. I've also drizzled white and dark chocolate over the top with a fork, but I don't like it as much. If I could give this more stars, I would! Thanks for an incredible recipe!

Connie's Zucchini "Crab" Cakes

Ohmygodsogood. Like others, I squeezed out the water in the shredded zucchini by putting it in a colander with pretty small holes, then squashing it down. I have made this recipe with regular bread crumbs and italian bread crumbs, and I would definitely recommend using EITHER italian bread crumbs OR regular bread crumbs, but with double the old bay seasoning. Otherwise they taste a little bland. I like to fry them up two at a time, then put them on a rack on a cookie tray in the oven to keep them warm. This keeps them crispy until served and they don't taste oily. And lastly, I tried baking them, but I still think frying gives them a crispier exterior and keeps them moister on the inside. Thanks for an amazing recipe!!

Baked Custard for Two

A delicious, warm, comforting, and so easy! I used one 16oz ramekin since it was all I had. Maybe because of this, I had to bake it for over an hour to get the desired consistency, and by then it had developed a sort of yellow skin on the top and had browned around the edges. I like my custard with a little more firmness however, so I might cut down on the amount of milk next time. It was also not as sweet as I would have liked it. Delicious as is however.

Strawberry Oatmeal Breakfast Smoothie

I LOVE this smoothie! I've made it literally hundreds of times since I first found it two years ago. It has just the right amount of sweetness, and it's thick and filling with the strawberries and oatmeal, so I often have it as a meal . Like others, I always process the oats first to a powder. I then add the milk, and I add just enough strawberries to meet the level of milk instead of counting them, since the size of the strawberries often varies. I find this gives it just the right consistency every time! Thanks for a great recipe!!

Jumbo Dark Chocolate Cookies

I like to follow a recipe exactly the first time I make it before making any changes. I love dark chocolate, but the cookies were so ridiculously salty they were practically inedible. I would try it again with unsalted butter, but if the recipe implies unsalted butter, it should be specifically stated.

I made the recipe as written and was extremely disappointed. Not only was the rice still completely uncooked and hard after the one hour cooking time, but the meatballs were falling apart before I browned and baked them and everything tasted very bland. I would not make this again.
