Chicken Spaghetti II

Our Army Wife group is feeding 100 hungry soldiers tomorrow so I wanted to make something that fed a lot of people that was also economical. I doubled the recipe, everything except for the Velveeta. I left it at 1 lb. The only thing I added was some fresh parsley and mixed it with the other ingredients and I added bread crumbs to the top along with parsley and paprika. It's wonderful!! I love this recipe and will definitely make again!!

Baked Slow Cooker Chicken

I used potatoes, celery, and onions on the bottom. The chicken turned out great, but I had to drain a lot of grease from the veggies. I think next time I'll use the foil method like the original says. I added several other spices to the chicken and rubbed it under the skin. The chicken was wonderful! I will definitely make again!

Vegetable Pizza II

This was a great recipe. It did make a lot of dressing. I like my veggie pizza light on the dressing so I ended up using four tubes of crecent rolls for one recipe of dressing. It was great though! I somehow managed to come home from the store with no brocolli so I used shredded carrotts, chopped red pepper, chopped green onions, shredded cheeze, and fresh parsley. It was fantastic and was a hit at work and at my evening get together.

Fried Ice Cream

Better than I could have hoped for!!! I increased the cinnamon to about 3t and also made the baked tortilla shells like another reviewer did. I topped with caramel, whipped cream, cinnamon, and sugar!! FABULOUS!!! I will definitely make again! It was a great presentation and tasted wonderful!

Mexican Lasagna II

I gave this a four because I changed it up quite a bit. I cooked my hamurger meat with the taco seasoning, garlic, onion, and jalapeno. I layered tortillas on the bottom, then 1 can refried beans, hamburger meat, tomatoes, black beans, chesse, then more tortillas. I baked it covered for 30 minutes then added cheese on top and baked uncovered for 10. I then added tomato and green onion. It was pretty good, but more "liquidy" than I hoped for. It worked great with mexican rice and chips though!

Super Easy Spinach and Red Pepper Salad

This was fabulous!! I added some sliced red onion, toasted almonds, and crushed garlic/salt/pepper to the dressing. It was great!! I made it today for lunch and added grilled chicken on top! This would also be great with roasted red potatoes, chopped avocado, fresh mushrooms, green onion, and chopped tomato!

I needed a quick snack for some of my hubby's co-workers. I didn't have to go to the store and the guys loved them!! I mixed the almonds with walnuts and they were gone in minutes!
