Homemade Refrigerator Pickles

oh yum yum yummy, recipe doesn't call for garlic...I doubt anyone would want garlic in a sweet pickle, that is for sour pickles. But I added celery seeds to the rest of the ingredients.

Pork Pie

Being of French Canadian heritage, 1st generation American, my Memere made French meat pie every Christmas. Very similar to this except I season mine with cinnamon, poultry seasoning, cloves, allspice, salt and pepper. (ooooh, NO ketchup or mustard.) Before baking I brush on one egg with a bit of water and sprinkle with paprika...what a beauitful looking and tasting pie when you're done. Sandy T.

French Canadian Tourtiere

My Memere always made meat pie every Christmas, and the last few years I've picked up her tradition. No recipes were ever written down, so I developed my own recipe from what I remembered. She always made the pork and hamburg and after cooked with the onion and garlic, it is then mixed with mashed (with butter and milk) potatoes. Mix the meat and potatoes with spices. My spices are: cinnamon, poultry seasoning, salt/pepper, cloves, allspice. I sell them, they are that good. Sandy T

After talking to someone else...I believe that recipe should say 1 tsp, not 1 tbsp, of anise. That is why my cookies are so bitter. Ugh!

Amish White Bread

I was looking for a go-to bread for my customers. I have a tiny home kitchen business supplying neighbors with breads and cakes. I used it yesterday to make two fruit and nut breads and two cinnamon swirl breads. I halved this recipe, but to get two loaves of each the original amounts should be used as seen here.

Corned Beef Casserole

I made this casserole last night and didn't think much of it. Today I ate some for lunch and liked it much better. Storing it for 12 hours or so I suppose the flavors melded. I substituted peas for a can or peas/carrots; the soups I didn't have so I used a can of gravy.

Buttermilk Oatmeal Bread

Well, I don't know about anyone else but I was disappointed and have no idea why this cake crumbled up while trying to slice it. I did not over bake it at all. I did add coconut but can't see how that would make it crumble. Did this happen to anyone else. The taste was pretty good but a tad dry.

Strawberry Freezer Jam

Got my berries ready (you can use whole berries that have been previously frozen...just thaw and crush). Then read the recipe...FOUR cups of sugar, OMG, that's enough sugar for 10x the amount of berries being used LOL. I used one cup of sugar and could have used about 1/2 cup. Wow is it sweet. But, the kicker is this...I had no idea what 1.75 oz was and used far too little pectin. My guess was 1 1/2 tsp, well I now know I should have been about 3+ tbsp. So, my preserves did jell but surely not enough. They taste wonderful though and I'll try it again after all this is gone. I loved trying it out, it was fun.

Donut Muffins

I added an egg which for some reason was not in the recipe, a tsp of salt, and 1 tsp white vinegar in the 1/2 cup milk. These muffins were then outstanding. Also, instead of melting butter and dipping in cinn/sugar I sprinkled on a cinnamon / sugar mixture before baking. Just wonderful...

Muffins surely make more than 12; I estimate it more like 15+, depending on where you fill the cups to. I baked the last of the batter in a Pyrex cup to make a little cake! Yuuummmm

Hummingbird Cake II

Let me tell anyone out there who wants to make this cake...do not HESITATE another minute. This is my go-to cake for any event. It is the most fabulous and you'll have to tie down people hands from eating the whole thing right then and there...before dinner even LOL. I frosted just the top with vanilla frosting, but I'm sure cream cheese frosting would be wonderful. My method was: mix all wet ingredients, then dry making sure the bkg soda has no lumps (yuck) and is mixed in well. Then incorporate the bananas and pineapple and walnuts just to fold them in and stop mixing there. The cake is dense and just so lovely with just enough cinnamon. I think I would add raisins too for a variation at times.
