Best. Pancakes. Ever. Light, fluffy, perfect flavour. Have made them exactly as written, and have made them with several variations. My favourite variation is to replace the sugar with Vanilla Creme flavoured stevia (I use a good dropperful or so, mixed in with the liquids), for a dairy-free, sugar-free pancake. I've also used almond milk instead of Silk (when that's all I've had on hand), with equally-delicious results. My next experiment is to try using alternate flours for a pancake that is also wheat-free, although that's probably going to be a bit trickier to sneak past my dedicated white-flour-and-sugar family. So far, the family agrees that these are the best-tasting pancakes ever (even though they don't know their dairy-free and usually sugar-free). Thanks for a great recipe!
