Frank's Favorite Slow-Cooker Thai Chicken

Phenomenal!! Made it exactly as written the first time and it was delicious; the second time I sauteed together onions and red peppers, and stirred that in with a bunch of fresh spinach about 15 minutes before I wanted to serve it. Also added about 2 tsp siracha sauce the second time; the spice cooks right out of it otherwise. Served over rice mixed with green peas... the family couldn't stop raving (even the 10-year-old that doesn't like spices or new flavours). This recipe is a keeper!

Pretzel Turtles

Super easy, always a crowd pleaser. I sprinkle a couple of grains of sea salt on top of each rolo before I press the toasted nut down... for a bit more of a "salted caramel" taste. Wherever I take these, people rave.

Classic Pancakes

Best. Pancakes. Ever. Light, fluffy, perfect flavour. Have made them exactly as written, and have made them with several variations. My favourite variation is to replace the sugar with Vanilla Creme flavoured stevia (I use a good dropperful or so, mixed in with the liquids), for a dairy-free, sugar-free pancake. I've also used almond milk instead of Silk (when that's all I've had on hand), with equally-delicious results. My next experiment is to try using alternate flours for a pancake that is also wheat-free, although that's probably going to be a bit trickier to sneak past my dedicated white-flour-and-sugar family. So far, the family agrees that these are the best-tasting pancakes ever (even though they don't know their dairy-free and usually sugar-free). Thanks for a great recipe!

Chicken Stew 'Fricot'

This is a great recipe. I've made it exactly as written, I've made it with the suggested modifications, and I've made it with my own modifications. I like it best with a few cloves of garlic minced and cooked in with the onions and chicken, using herbes de provence for the spice, cooking it with broth for 2 hours, and adding in a bit of flour at the end to thicken it. A rich, delicious stew that's definitely greater than the sum of it's parts!

Turkey Breast Roulade

Wow, this is good! I used smaller turkey breasts, since that was all the butcher had. I flattened and rolled them individually, so cooking time was a bit less (probably about an hour, rather than an hour and fifteen). Delicious, but I'll probably try to sub some white wine for half the butter next time, to see if I can reduce the fat a bit. A keeper!

Brown Rice

This is GOOD! I realized at the last minute that I didn't have white rice, so I subbed in brown minute rice. Next time I will definitely either use white, or regular brown (and cook it longer). The taste was great, though - although next time I'm not sure I'll use the basil. The flavour of it wasn't quite right. Might use the herbes de provence, as another user did. But this is an excellent, hands-off recipe, that I'l be using again!

Delicious Ham and Potato Soup

Delicious and easy. Made it exactly as written the first time, played with it a bit the second (replaced about 1/4 cup of the milk in the white sauce with sherry and added some garlic powder to make it a bit richer). Will be using this recipe over and over!

Chicken Thigh Fricassee with Mushrooms and Rosemary

Delicious, rich sauce. Made it exactly as written, and it was a success. Will make it without the olives next time, though, as husband doesn't care for them. Used bone-in chicken legs and backs, and will probably use boneless, skinless chicken thighs next time. Definitely spoon the sauce over rice - it's fabulous!

Honey Baked Chicken II

YUM - this honey/mustard/curry mixture is divine. Don't be afraid of the curry - this doesn't taste like a 'curried' dish. It just gives the honey/mustard mixture an outstanding kick. This is going in the regular roster!

Parmesan Sage Pork Chops

Wow - moist! And what great flavour. Absolutely delicious, very easy. This is a keeper. I'll consider cutting the amount of breadcrumbs next time, though - as others have mentioned, I'd rather have more of that delicious parmesan/sage/lemon zest mixture on my pork, and I felt the amount of bread crumbs cut into that a little too much. What an excellent recipe, though... THANKS!

Bubba's Jambalaya

Excellent flavour, dead easy. Made it pretty much as written except without the bacon or shrimp (I had neither). Perfect for my husband's palate, who doesn't like overly spicy food. I added hot sauce to mine! Great recipe, customizable in a hundred different ways, depending on what's in your fridge. A keeper!

Yum. As some others have advised, I used 1/2 white wine and 1/2 water, and it gave it a lovely flavour. Also added two cloves of garlic in with the onion, because... well... I love garlic! Doubled the cheese, but that was because I misread the recipe. The hardest part about this yummy dish for me was getting it to the table for the family, rather than eating it straight out of the pan after I tasted. Delish!
