Norwegian Lefse

This is the first lefse recipe I have tried but everyone who ate it loved it- including my Norwegian grandmother! I only used about 6 lbs of potatoes. I served it rolled up with butter and cinnamon sugar- yum!

Crab Rangoon III

After making this a few times I did tweak some things. I only use 1 can of crab meat- 2 would be so overwhelming! Sometimes I use smoked paprika instead of regular paprika- it gives it a nice taste. Of course frying them tastes better but basting them with a little egg and baking them is still really good.

Easy, Cheesy Tortellini Bake

Great recipe! The only thing I would change about this is to use a little less spinach- maybe only 6 oz. I froze the left overs and when we ate it later I found the spinach to over take the sauce.

Sausage and Mushroom Calzones

Awesome! I used the Rhodes frozen bread dough as well. The hardest part was rolling out the dough so I wound up cutting the dough in half and only working with half of the loaf at a time. I used LOTS of flour to cut down on the stickiness. Will definitely add into our recipe rotation!

Chocolate Cream Dessert

I decided to make these in cupcake tins instead of a pan. I added an extra 2 tablespoons of margarine because I felt like it wasn't crumbly enough. I baked the crust without paper liners- mainly because I didn't think of it until after. After they were cooled I put the crusts into the paper liners. I layered everything the same as the recipe and added just a dab of the whipped topping. Wasn't the most visually appealing but if I was making it again for company I would use foil liners and a piping bag for the whipped topping on top. Taste was delicious- didn't taste low fat at all!

Best Beef Dip Ever

I had a 2.5 pound chuck roast so I reduced the spices some as well as used 2/3 c low sodium soy sauce and 4 cups water. The taste was really good but it seemed very greasy, like more so than a beef sandwich from any local joint.

Toddler Muffins

My son loves these! I've made them a multiple times with a bunch of substitutions based on what I had on hand and they've always come out great. I usually add zucchini and cinnamon. Even my husband loves them!
