Quick Chicken Piccata

I made this for dinner tonight and it was good. The one thing that I didn't like was how tart the sauce was. When I make this again, and I will, I might leave out the lemon juice or at least decrease it. A change that I did make was to season the flour instead of the chicken. The kids enjoyed this dish and soaked up the extra sauce from their plate with good, crusty french bread.

Can't Get Enough Caramel Cookies!

made this this afternoon for an after school snack. It was a very easy recipe to do but I am not sure if I will make it again. The flavor was fine but it did not hold together and was not at all chewy. It acted more like a granola than a cookie.

Too Much Chocolate Cake

I made this cake yesterday for a party....there were 4 other dessert and this one went fast! It is delicious. I followed the recipe exactly and was a bit nervous. There were some reviews that said that 1 cup of oil was too much. let me tell you it is not. You need to make this cake, it will not let you down!

Slow-Cooker Chicken Tortilla Soup

FANTASTIC!!!! Made this last night fro dinner and it was a hit. I did make a few changes...I used frozen chicken breast (threw it in the slow cooker that way), did not use canned chilies but 1 large chopped poblano chili, 1 can of black beans that I rinsed before using and then half way through cooking I added 6 corn tortillas that I tore up. This gave the soup a little thickness that I like. I am certainly making this again!

Chicken Tortilla Soup I

I made this last night for our family. I have had tortilla soups before and I tend to like it very thick.So what I did was chop up 5 corn tortillas very small and added it to the soup as it was cooking and then added 1 extra can of chicken broth, I also let it cook for about 1 hour more than suggested. It was wonderful! So full of flavor and my kids ate it! Will definately make again...might also consider this something to make for guests.
