Lucie's Vegetarian Chili

I loved this but my hubby didn't care for all the veggies. The flavor just got better every day since I had plenty of leftovers and it froze for later lunches as well.

Corned Beef and Cabbage I

Best corned beef and cabbage recipe yet! I much preferred cooking in the dutch oven over the crock pot. The meat was so tender but you were able to slice it without it falling apart. The veggies were not over done either. The simple recipe was a delicious flavor! I will use this one over and over.

Italian Sausage Soup

This was delicious! I subbed the beans with a cup of rice I had left over and I think I would prefer the rice. It was a definite keeper.

Chicken Noodle Casserole I

Loved this one! The flavor was delicious and I loved the consistency. It is great for when you are having company because you can prepare ahead. It is also very versatile. You can add anything to this. I chose to add carrots, mushrooms and onion. If you want to pre cook whatever you choose to add you could add it to the pot in the last couple minutes while cooking the chicken. I didn't do this as I don't like my veggies too soft. You could also swap the noodles for potatoes.

Adobo Chicken with Ginger

This was good. I would probably give it a 3/12 star if that was available but went with four cause I can't say anything bad...it just didn't knock my socks off. Very Easy, quick and I have most items on hand at all times. Must serve with rice it adds to the meal.

Creamy White Chili

I made for a Christmas eve dinner since I had to work earlier in the day and needed something quick that would not keep me from visiting with family. This was a hit! Everyone went back for seconds and a few asked for the recipe. I did use different beans than what the recipe calls for since it was what I had on hand. I used pinto, great northern and the white kidney beans. I doubled the recipe and it came out great. Im sure it freeze great as well however I didn't have any leftovers to try it out.

The Best Thai Coconut Soup

Best flavor! Closest I've ever come to my favorite Thai restaurant. I tried it with a couple changes as well to make a meal of it. I added a chopped chicken breast and a 1/2 cup of rice. It was delicious and also froze well.

Seafood Chowder

Best chowder ever!! The only things I changed were using low fat instead of fat free items also added 1/2 cup of clam juice and fresh parsley. This was delicious and will be my go to for seafood chowder and probably clam chowder.

Sausage Stuffing

I did make a few changes but this is a great basic recipe that you can easily adjust to your taste. I added 6 sliced fresh mushrooms and 1/4 cup of dried cranberries. I also cooked it in the crock pot for 1 hour, started on high and turned to low after about 30 minutes. I also topped it with a 1/2 cup of chicken broth just before cooking. I will definitely make this again!

Probably could be a 4 with a few tweaks to the recipe. It was a little dry for me so I will try adding a little sherry and may some cream cheese to sauce it up a little next time.

Russian Tea Cakes I

These were one of the best russian tea cake recipes I've tried. In the past the recipes I've tried have tended to be dry but this recipe was nice and moist...almost melts in your mouth.

New England Clam Chowder I

This is the best clam chowder recipe I have made. I did follow some of the suggestions and used the clam juice instead of water. I also added a little flour (mixed with the broth) at the end of the recipe to thicken it up just a little. The flavor was amazing and the consistency was perfect!

Country House Bed and Breakfast Casserole

My family did not like this. I substituted the ham for sausage added mushrooms and this made it too greasy. I think I will try it again but stick to the ham and maybe added green chilis. The croutons did not appeal to any of us either...maybe hashbrowns instead.

Dee's Roast Pork for Tacos

This took forever to cook and still was not as tender as it should've been...I'm guessing a bad cut of meat. We ended up going out to a taco shop since cooked for 6 hours and still not able to shred the meat. The flavor was ok as I put it in the crockpot the next day it did finally tender up.

Stephanie's Freezer Spaghetti Sauce

This was a nice sauce for freezing. I made lasagna with the sauce and it was delicious. I also used for spaghetti sauce and it was a little watery for me and could use a little more flavor. Perfect with lasagna due to all the other flavors you add but if I make it for spaghetti again I will add a little extra garlic and onion when browning the meat...maybe even add a little extra italian seasonings at that time as well. All iin all a great recipe to play with especially if you have a garden full of tomatoes!

Pineapple Banana Bread

I made this recipe and cooked it in muffin tins. This was pretty good. I would have liked a little more banana flavor and a little less oil. The muffins froze very nicely. I will probably try again but cut the oil in half and maybe add a little pinapple juice and another banana.
