Slow Cooker Taco Soup

Easy and very good. Like other reviewers I browned the ground beef and taco seasoning at the same time and then put everything together in the crock-pot.

Alfredo Sauce

This is very good and easy to make. I used I cup of parmesan and 1/2 cup of an Italian cheese blend. I did add some freshly ground pepper and a dash of Nutmeg right before serving. No more store bought for me.

Deep-Dish Cast Iron Pizza

Using a cast iron skillet is a great idea. Since this makes a lot of dough I made two pizzas; one in a 12 inch skillet and another in a 10 inch skillet. I also subbed one cup of whole wheat flour for one cup of A/P flour because we like a whole wheat type of crust. One pizza was a meat lovers pizza with Italian sausage, ham and pepperoni and the other was a supreme type pizza with meats,green pepper, red onion and mushrooms. I also like extra cheese so I doubled that. Cooked both at 430 degrees for 25 minutes and they were done. Brushed both crusts with the butter and garlic powder mixture. Excellent!!! Will make this again and again.

Isaac's Juicy Chicken

Makes good moist but crunchy chicken. I followed the recipe but did add about a tablespoon of dry ranch dressing to the breadcrumbs since I had a packet of dry mix which was about to expire. Like another reviewer suggested I did bake these on a rack to make them crunchy. I'll use the leftovers for a chicken sandwich for lunch.

New Twist To An Old Favorite

Eggplant Parmesan II

Very good. I did salt and rinse the eggplant first but otherwise pretty much followed the recipe. I did add extra herbs ( basil and oregano) and also added 1 cup of ricotta cheese along with the other cheeses. Will make this again.

Unbelievable Squash Casserole

easy to make and very delicious. I did not have stuffing mix so I substituted about 3/4 of a sleeve of buttery round crackers. Also added salt and black pepper to taste. For those who think it's too bland try adding about a tsp. of cayenne pepper.

Spaghetti with Garlic and Basil

easy to make and very adaptable. For a main dish I added some sautéed ham chunks along with the garlic and basil and fresh ground pepper. This is on my monthly rotation.

Glazed Meatloaf II

Very good. I made one change and that was to sub a pound of lean ground turkey for one pound of ground beef--trying to cut out some fat. I liked the lemon flavor and the sauce is great. A keeper.

Slow Cooker Salisbury Steak

This is a very good slow-cooker meal and it is very flexible for substitutions. I used one lb. of ground beef and one lb. of ground pork for the meat. Also sub'd half a cup of chopped onion instead of the dry onion soup to reduce the sodium content. For the gravy I used one can of cream of chicken and one can cream of mushroom along with the water and au jus packet. The gravy just calls for lots of mashed potatoes . Very good and easy!

Sheryl's Baked Potatoes

These potatoes turned out delicious. I placed the potato between two wooden spoons to prevent cutting through all the way and then soaked them for about 30 min in cold water to help them fan out better. Sprinkled on salt, pepper, and then drizzled melted butter with olive oil and herbs on the potato's and wrapped them in foil. Baked them for about an hour and then opened up the foil and sprinkled parmesan and mozzarella cheese over the top of each one and baked for another ten minutes. Very good and different. I will make these again.

Asian Beef with Snow Peas

Pretty much followed the recipe except I added some broccoli and mushrooms with the snow peas. I also doubled the sauce since we like extra sauce. Served over noodles. Very good.

Salmon Patties II

very good base recipe which can be spiced up to your preference. I added some Old Bay and a little garlic and onion powder. I did like using the self-rising flour instead of cracker meal. I think it gave the exterior a better "crunch" while pan frying. I'll make this again.
