Shoepeg Corn Casserole

Outstanding! At first, I didn't know what to make of the texture, because the veggies were still a little crispy, but I ended up loving it....and I took it to work the next few days and the flavour just got better and better each time.

Pancakes

Good recipe with a few minor additions...follow the details exactly, then add some sea salt, sugar, and a dab of sour cream....they came out perfectly. Cook right at medium and watch carefully because they cook quickly...then flip and a few seconds later it's done. My picky kids actually wanted more....amazing.

Island Kielbasa in a Slow Cooker

Excellent flavor. I also cut the brown sugar in half, but the taste was perfect. If you like the sweet and sour pork at a Chinese restaurant, you'll love this. Let it cook for hours, and then put it over brown rice. I loved it that night and then took it to work for a few days for lunch. Excellent!

Incredibly Cheesy Turkey Meatloaf

Pretty simple recipe and very tasty. The only change I made was to mix in about half a packet of the Lipton onion soup mix (b/c I had it lying around from a previous recipe). I added a side of garlic mashed potatoes, and both of my daughters cleaned their plates (which NEVER happens). As with ground turkey, it's sometimes tough to tell when it's cooked, so cooking this a few minutes past the recommended hour certainly didn't hurt mine or dry it out in any way...I think it even enhanced the flavor to add about 10 minutes to the cooking time.

Easy Chicken Tetrazzini

Pretty good family dish. My two picky daughters ate it, so it must be pretty good. I only used 3 chicken breasts, and it was the right amount. Also added garlic and a cup of shredded cheddar to the soup mixture to add flavor (in addition to the cheese I sprinkled on top before baking).

Corn Bread Turkey Casserole

It tastes pretty good....however, for the overall taste, it wasn't worth the labor intensity...cooking all that chicken (I used this instead of turkey) and chopping it up took a while...so yes, I do have 2 in the freezer to heat up later, but it still was a little too much work for too little result (in flavor).
