I'm a 38 year old, christian mother of 1. Married my high school sweetheart. I love to cook and I am always looking for new things to try and I constantly force my hubby to be the guinea pig. I do well on some things and not so well on others.....but he's still kicken so I must not be doing too badly.
My favorite things to cook
I don't really have a preference. I am big on comfort food, but I like "lighter fare" meals too. I'm one of those "modifiers" who always ends up "adding this" or "deleting that" to recipes I try. My cookbook has more hand written notes in the margins than actual recipes.
My cooking triumphs
Anything that doesn't make the hubby sick is considered a triumph :-)
My cooking tragedies
OHHH.....so many tragedies. I couldn't make a pie crust to save my life. Just don't have the knack for it.

No Bake Peanut Butter Pie
This was WONDERFUL. Cut in 1/2 to make 1 pie only as we had 3 other pies at our Thanksgiving dinner. I wished I had made 2 of these because it was gone almost immediately. Positively RAVE reviews. The only change I made was to spread a thin layer of choc. fudge topping on the crust before pouring the pie filling in. Froze overnight and put in the fridge about 2 hours before eating to thaw slowly. Wonderful pie.

Double Layer Pumpkin Cheesecake
Very Good. Made a trial run on this as a possible dessert choice for Thnksgvng. Added a little sour cream to the cream cheese mixture, and more like 3/4 c. pumpkin. Super easy! Deifinately going on the the Thxgvg menu this year!
