Roast Sticky Chicken-Rotisserie Style

I've never made this chicken, as written. I have used the combination of spices and it's PERFECT! I'm not sure why I haven't reviewed before now, as I've been using this for a couple years now. I mix up these ingredients (times 20) and keep in an airtight container. This is the ONLY mix of spices I use on my chicken, turkey & fish! One day I'll try the total recipe, but I'm giving 5 stars just based on the combination of spices. Thanks.

Caramel Apple Pork Chops

Made this pretty much as written. The two main changes I made were to marinate my chops in apple juice first, and to add apple juice to the glaze (and I increased a lot, to have extra). I also poured the glaze/apple mixture over my chops & baked for 30 minutes (I used extra thick chops). My youngest ate it with no complaints, so it's TRULY a keeper! Dinner is normally always a struggle with him. Thanks much, Karena!!!

Mrs. Sigg's Snickerdoodles

Didn't work for me. These were sooooo not what I was seeking. I wanted the snickerdoodles you get from the mall...the ones that are flat, buttery and chewy in the middle. These are thick and cake-like. Will not waste money on anymore snickerdoodle recipes...will just make a trip to the mall and buy the cookies I like so much. I must say that cookie company definitely seems to have kept the recipe under wraps well!!

Fluffy Pancakes

PERFECTION! Let me caveat this review by stating that I DO NOT eat homemade pancakes; I only eat the ones made at the famous breakfast restaurant...until now! I ran across this recipe yesterday, while waiting at the DMV. Tried it this morning (as is) and there will be no more store-bought pancake mix (which my kids eat) or frozen waffles, at our house! We will be using this recipe and I will freeze pancakes/waffles for hurried mornings. I can't wait to add to it (bananas, strawberries, blueberries, peanut butter, etc.). Thanks, so much for this recipe! Now I have to go look through the poster's recipe box and see what other goodies are in there!

Cha Cha's White Chicken Chili

I had leftover chicken to use and leftover navy beans in the freezer, so I looked for something using those ingredients and came across this...loved it! While this is not a kid-friendly meal, for my family (the 4-year old didn't like the way it looked and therefore wouldn't touch it), the adults in my life raved about it. The only real change I made was to add green peppers, onions & omit the jalapeno peppers & chile peppers...I'm a fan of allowing others to determine their heat level. I added minimal red pepper and for many that was just enough. I will make this for pot lucks and/or for myself when the kids are away. Thanks!

Kung Pao Chicken

Good recipe...as close to the real thing as one can get w/o going out for Chinese! I did make a few minor adjustments based on what I had on hand. Once I saw how much the sauce made, I decided to triple it...it's not enough for the meat or rice if you choose to serve over rice. I used sherry in place of the wine, shrimp in place of chicken, peanuts in place of the cashews, and Wondra gravy mix in place of the cornstarch (it blends better than cornstarch or flour, so it's all I use). OUTSTANDING! This recipe is truly a keeper and I urge all to try it as is or with my minor changes.

Best Ever Muffins

Just made these...AWESOME! We added 3/4 c chocolate chips to the batter and once poured in muffin pan cups we topped with a few additional chips. Will definitely try with other ingredients. Thanks for a great base recipe...this makes 12 muffins on the nose!

Marinated Ranch Broiled Chicken

I'd really like to give this 4.5 stars (.5 knocked off for the cooking time, which seems off to me). For this recipe to be so easy, this was truly tasty! This is a perfect dish for a weeknight dinner. Now, I used 2 HUGE chicken breasts that I cut into smaller portions first. Then I sprinked half the pack of dry mix onto my meat & let it marinate for an hour. Then I mixed the remaining dry mix and the same amounts of oil/vinegar and poured over the chicken. Baked uncovered for about 45 minutes; I dunno what type of chicken would be done in 15. Either way, mine was perfect...moist and still had some liquid to drizzle over the meat. I'm having leftovers for lunch today...YUMMO!

Cider Vinegar Chicken

This was really good and I didn't feel the vinegar was overpowering at all. I did make some changes based on my BFF who uses a very similar recipe. I seasoned my meat with all-purpose seasoning, topped with red pepper flakes, and added some water. Additionally, at the end, I browned the meat under the broiler then removed the meat from the pan. I placed the pan on top of the stove, brought to a boil, added 1/3 c brown sugar and thickened the sauce with Wondra gravy mix. Outstanding and even better the next day for lunch! I only gave 4 stars based on my additions (even though the recipe as written is a good base recipe) and the cooking time written. Thirty-five minutes at 350 degrees wasn't nearly enough time.

Shrimp Scampi Bake

really good recipe, minus the cooking time. as another reviewer, 8 minutes in the oven was enough...perfect. the one thing i left out was the dijon mustard. i'd made the sauce and tasted it before i put in on the shrimp...good decision, as i didn't like it. re-did the sauce and baked. tossed with angel hair pasta and a mix of fresh parmesan and romano...GREAT! will keep in rotation.

Extra Easy Hummus

My first time having & making hummus...if this is all that's to it, YUMMY! I did adhere to some comments and halved the cumin; also used 1.5 teasp jarred garlic. Next time I'll try the tahini or sesame oil and compare. Overall, very good. One question; how long can I refrigerate?

Egg and Sausage Casserole

Made this for Sunday breakfast this morning...OUTSTANDING. I did take the advice of several previous reviewers and used 10 eggs, 1 cup of cheddar cheese and 1 cup of mozzarella...that was plenty. I also baked about 50 minutes. I can't wait to make again...thinking of subbing ham, bacon, spicy sausage, and/or hash browns for the crescent roll. Thanks for a great base recipe.

French Toast Casserole

I just made/served/ate this dish and I thought this was a very good recipe. As written, it works. However, I think it would be great recipe with changes and it's easily a recipe one could make their own. As for reviews that discuss/rate their changes, I don't mind. I love reading them and noting their changes...I read one that mentioned egg nog; I will DEFINITELY try that...sounds grand!

Taco Pasta Salad

I think this is a good base recipe that will allow you to make it your own. I omitted the pasta. I usually throw the leftover taco meat on a salad and I saw no reason to fatten up the salad with the pasta. I also left out the green peppers, added olives & subbed ground turkey. Was fabulous and will make again and again! Will try w/some of the other suggestions (i.e., chicken, bacon ranch dressing, etc.).

Easy Pork Chop Casserole

Just made this for dinner and while it was really easy and quick, I must say the presentation wasn't the best and the meat was a little bland. Next time, I will sear the meat first, as cooking the meat in the creamed/water mixture created more water than I'd like to see for "gravy". I ended up scooping a good deal of the "gravy" out and making rice (which came out really good). The remaining "gravy" is in the oven thickening up; I will put it over the rice/meat once on our plates. Overall, this was a good recipe, but you WILL need to tweak it to your taste.

Flourless Peanut Butter Cookies

i really enjoy this recipe; however, i did throw in a tablespoon of flour...it needed something to combat the gooeyness of just the mixture alone. that aside, i like this recipe and will continue to use it. thanks much!
