Brennan's Irish Soda Bread
Wonderful & simple. My only adjustment was that I used a cup of buttermilk vs. the milk and vinegar combination suggested in recipe. I also would recommend going with a high-gluten flour instead of standard all-purpose flour - it gives it more body. Will definitely make again.

Fudge Truffle Cheesecake
Very good and relatively easy to make. Would recommend using a darker chocolate, for a richer chocolate flavor. If you prefer a creamy cheesecake, you'll love this recipe.

Best Ever Meatloaf II
My husband is a very picky eater, and he couldn't get enough of it once he tried it... its that good. Also, if you chop up green peppers & onions and freeze them ahead of time... it makes prep work a breeze.
