Chicken Enchiladas V

Very yummy recipe! I added a can of Rotel to the chicken mixture before making the enchiladas. If you do that, I recommend leaving out the chopped peppers, unless you like your food really spicy!

Mexican Salad

Wonderful salad! I added an avocado, and halved the amount of oil. I also only let it sit for about 20 minutes (due to poor timing) and it was very tasty.

Lentil Rice and Veggie Bake

Very very yummy vegetarian main dish. I doubled the tomato sauce, exchanged red pepper for the carrots and celery, and used a can of lentil soup instead of cooking lentils. I recommend adding a bit more rice if this is a main dish.

Broccoli and Tomato Bake

Delicious! I follwed the recipe fairly accurately, but did not steam the brocooli. This made it fairly crunchy, but that is the way my family likes it. The goat cheese really adds a wonderful flavor.

Caramel Apple Pork Chops

Very Very good! My husband called it "Apple Pie w/ Pork Chops" I doubled the sauce by making an extra batch after taking out the apples. I bet you could stretch the sauce without adding more butter by using drippings from the pork chops.

Brownie Bread

Braised Balsamic Chicken

Excellent recipe. I double the tomatoes, and use garlic powder instead of garlic salt. I serve it over angel hair pasta. This is a huge favorite around my house, I've made this many times, and I keep getting requests for more!

Terrific Turkey Chili

This was a great meal! The strips of zucchini really add to the texture and flavor. I used a can of diced tomatoes with green chilis, and added garbanzo beans.

I forgot to put in the salt, and had to add it afterwards. That made this dish very good. It needed more onions, and I think they should have been chopped so they were in the mixture more.

Pork Chops with Apples, Sweet Potatoes, and Sauerkraut

The perfect mix of sweet and sour. I love sauerkraut and this dish was amazing. I did not brown the pork chops because I'm lazy :) Still turned out very very good!

Roasted Pork Chops with Tomatoes, Mushrooms, and Garlic Sauce

This was a great pork chop recipe. But I think 40+ minutes at 425 is way too long. I cooked it at 400 for 40 minutes and they were overdone. I added onions and bell peppers to the veggie mix, and they were delicious. I did the spice rub exactly as written.

Slow Cooker Pot Roast

Might be the best pot roast I've made. I had to substitute Italian dressing (from a bottle) for the packet, which made it a bit oily. Tasted SO good!

Roast Goose with Wild Rice Stuffing

The stuffing came out very yummy! I put the extra in the microwave and served it on the side, not as good as the in-bird stuffing. Ours wasn't too fatty, I think the secret is taking out the pad of fat that is just inside the goose before cooking. We brined our goose for 24 hours in a turkey brine, too.

Avocado Mac and Cheese

I really enjoyed this recipe and so did the kids. Hubby was not impressed with the hint of lime (which was part of why I loved it). I had to add some feta as I didn't quite have enough cheddar, and it needed salt, so I added 1/2 teaspoon. I also added shrimp, per the footnoted variations, but saluted them in garlic and oil. I also cooked some diced zucchini at the some time and then puréed it with the avocado and cheese so that it would be a meal complete with veggies. I used an immersion blender. I usually don't write reviews when I make this many changes, but in this case I don't think it affected the flavor much.
