Im a friendly outgoing mom of two beautiful little boys. I have the greatest man by my side, whom I love more than life itself. Experimenting more and more with new foods, and getting pretty good if I do say so myself!
My favorite things to cook
The easy peasy stuff, stir-frys are great along with baking. I enjoy cooking whatever I can master and do enjoy pleasing my fiancée. And having 3 men in my house, well you know what they say about getting to thier heart :). But I honestly dont care for it much. Can get quite messy and im a little OCD...lol So whatever's easiest makes me happy!
My favorite family cooking traditions
Don't really have any yet. But I'm sure there will be as the years come and my family grows! A personal fav of mine is enjoying my mother-in-laws DO DIE FOR cooking during the holidays when all the family gets together :)

Mushroom Meatloaf
Not a big fan of meatloaf but this was DELICIOUS!! Even my hubby who stays away from ground beef, loved this dish! I did make a couple changes, as suggested by other reviewers, which are as follows; sauteed pre sliced fresh portabella mushrooms with the 1/2 cup of onions and diced bell peppers in a pan with 2 cloves of garlic before mixing into ground beef mixture. Used garlic herb flavored bread crumbs and baked at 375 degrees for an hour and a half.. Paired this with sauteed green beans/bacon bits and mashed potatoes and we were in heaven!! Definitely will be making this many, many more nights to come!

Spicy Grilled Shrimp
Perfect! This was some of the best shrimp I've had in a while and so easy to make! Made them in the broiler about 6 mins per side. I love heat so the spice was just fine for us, BUT if you don't care too much for spicy foods or are feeding young children, I would highly suggest bringing the red pepper down a notch. Also I cut the salt in half as suggested by other reviewers and it was plenty salty even w/ this adjustment! Thanks for a great dinner recipe!

Easy Grilled Lemon Chicken
Umm I'm not quite sure what to rate this. I made two minor adjustments in adding 1/4 teaspoon garlic salt and 1/4 tsp crushed red pepper. But the amount of lemon juice and soy sauce was TOO much I think w/ or w/o me having added these ingredients. So IF I ever make this again I will cut both in half. I still can't shake the overwhelming taste out of my mouth! (Also I made this over the stove, not a grill)
